本发明涉及一种保健鸡肉,尤其涉及一种玉米奶酪清肺鸡肉排及其制备方法。
背景技术
鸡肉中蛋白质的含量较高,易消化,鸡肉对营养不良、畏寒怕冷、乏力疲劳等症有很好的食疗作用。中医认为,鸡肉有温中益气、补虚填精、健脾胃、活血脉、强筋骨的功效。而将鸡肉中添加有营养的新鲜蔬菜、膳食纤维、蛋白等物质就更能使其营养成分高,但同时也很美味,送酥爽口。随着人们生活条件的改善,鸡肉及其料理品在餐桌以外的地方越来越常见,但是出现在市场上的种类很少,然而随着人们生活水平的提高,市场上单一的即食肉食品并不能满足人们的生活需求,且营养也是单一的,如何获得高营养且具有一定的养生保健的鸡肉产品正在成为主题。

本发明克服了现有技术中的不足,提供了一种玉米奶酪清肺鸡肉排及其制备方法。
本发明是通过以下技术方案实现的:
一种玉米奶酪清肺鸡肉排,由下列重量份的原料制成:
鸡肉40-50、营养添加剂10-13、玉米粒8-11、面包糠15-20、西芹3-4、香瓜8-9、石榴汁7-8、柚子皮3-4、奶酪1-2、秋刀鱼6-7、啤酒3-4、凉皮6-8、香菜3-4、椰子汁7-10、洋葱2-4、扁豆10-15、木姜子根2.1-2.6、泡桐花1.2-2.1、石韦1.9-2.1、陈皮2-2.3、藤碎补2-2.2、辣蓼草2.1-2.6;
所述营养添加剂由下列重量份原料制成:
红参1-1.4、槭叶草1.2-1.8、使君子1-1.4、柿蒂1-2、牛肉9-12、辣椒油1.8-2.2、猪油2.8-3.8、香肠6-9;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7-9倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10-15分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;
(3)牛肉洗净,切长条形薄片,拌入中药粉,取牛肉片将油肠螺旋状包覆,并用稻草固定,将做好的牛肉卷置于烤炉上烘烤8-10分钟,取出晾凉,收取牛肉片,烘干磨粉,即得。

(1)将木姜子根、泡桐花、石韦、陈皮、藤碎补、辣蓼草用6-9倍量的水浸提后浓缩,滤得滤液,经喷雾干燥,得中药粉;
(2)秋刀鱼倒入锅中,加1-1.5倍水,先小火煎煮10-15分钟,再倒入啤酒、奶酪,继续熬煮15-20分钟,取出秋刀鱼,去掉鱼骨,待用;
(3)凉皮、香菜、洋葱混合入搅拌机搅拌成泥状,拌入扁豆,混合上锅隔水熏蒸20-25分钟,取出锅内扁豆,混合剁碎,待用;
(4)西芹、香瓜烘干磨粉,与营养添加剂合并,待用;柚子皮切丝,与玉米粒混合倒入油锅中小火翻炒,2-3分钟后,再兑入石榴汁,盖上锅盖焖煮12-15分钟,滤得玉米粒,待用;
(5)鸡肉兑椰子汁混合剁碎,拌入步骤(1)(2)(3)(4)所得物料,混合均匀后,做成大小均匀的多个鸡肉饼状,并分别滚上面包糠以及剩余物料,入油锅煎熟即得。

实施例1:
一种玉米奶酪清肺鸡肉排,由下列重量份(斤)的原料制成:
鸡肉40、营养添加剂13、玉米粒8、面包糠15、西芹3、香瓜9、石榴汁7、柚子皮4、奶酪2、秋刀鱼6、啤酒4、凉皮8、香菜4、椰子汁7、洋葱2、扁豆15、木姜子根2.6、泡桐花1.2、石韦2.1、陈皮2.3、藤碎补2.2、辣蓼草2.6;
所述营养添加剂由下列重量份原料制成:
红参1.2、槭叶草1.3、使君子1、柿蒂1、牛肉10、辣椒油1.8、猪油3、香肠7;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;

(4)西芹、香瓜烘干磨粉,与营养添加剂合并,待用;柚子皮切丝,与玉米粒混合倒入油锅中小火翻炒,2分钟后,再兑入石榴汁,盖上锅盖焖煮12-15分钟,滤得玉米粒,待用;
(5)鸡肉兑椰子汁混合剁碎,拌入步骤(1)(2)(3)(4)所得物料,混合均匀后,做成大小均匀的多个鸡肉饼状,并分别滚上面包糠以及剩余物料,入油锅煎熟即得。

鸡肉40-50、营养添加剂10-13、玉米粒8-11、面包糠15-20、西芹3-4、香瓜8-9、石榴汁7-8、柚子皮3-4、奶酪1-2、秋刀鱼6-7、啤酒3-4、凉皮6-8、香菜3-4、椰子汁7-10、洋葱2-4、扁豆10-15、木姜子根2.1-2.6、泡桐花1.2-2.1、石韦1.9-2.1、陈皮2-2.3、藤碎补2-2.2、辣蓼草2.1-2.6;
所述营养添加剂由下列重量份原料制成:
红参1-1.4、槭叶草1.2-1.8、使君子1-1.4、柿蒂1-2、牛肉9-12、辣椒油1.8-2.2、猪油2.8-3.8、香肠6-9;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7-9倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10-15分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;

(1)将木姜子根、泡桐花、石韦、陈皮、藤碎补、辣蓼草用6-9倍量的水浸提后浓缩,滤得滤液,经喷雾干燥,得中药粉;
(2)秋刀鱼倒入锅中,加1-1.5倍水,先小火煎煮10-15分钟,再倒入啤酒、奶酪,继续熬煮15-20分钟,取出秋刀鱼,去掉鱼骨,待用;
(3)凉皮、香菜、洋葱混合入搅拌机搅拌成泥状,拌入扁豆,混合上锅隔水熏蒸20-25分钟,取出锅内扁豆,混合剁碎,待用;
(4)西芹、香瓜烘干磨粉,与营养添加剂合并,待用;柚子皮切丝,与玉米粒混合倒入油锅中小火翻炒,2-3分钟后,再兑入石榴汁,盖上锅盖焖煮12-15分钟,滤得玉米粒,待用;
