Abstract
本发明公开了一种健脑益智的食品及其生产方法,由以下重量份的原料组成:荞麦5-15份、玉米10-20份、山药5-10份、核桃5-8份和紫菜3-7份;所述速溶粗粮制品为速溶粉、速溶颗粒和速溶夹心多层颗粒。本发明将荞麦、玉米、山药、核桃和紫菜合理搭配,荞麦和玉米作为主食能够为人体提供能量,山药健脾益气,核桃补脑效果显著,紫菜能够补充各种人体微量元素和氨基酸。制成的粗粮制品,经常服用,具有很好的补脑益气的保健作用。

本发明涉及食品保健技术领域,具体为一种健脑益智的食品及其制备方法。
背景技术
随着社会进步和发展,从事脑力劳动的人越来越多,如科技、文艺、教育、卫生、财贸、法律、管理等领域的人员,以及那些体力劳动强度不大而神经高 度紧张的群体,如观测、检验、仪表操作等人员,长期从事脑力劳动,存在工作时间不规律、肌肉活动少等问题。白领、金领虽然处于社会的中上层,工作环境也比以前优越得多,但是高档的工作环境暗藏诸多健康杀手,经常从事视屏作用会导致视觉经常,长时间保持静态作用形成不良工作***,压力大、竞争性强使精神无法松弛,封闭工作室制造了不良微环境,导致空调病,还有肌肉不适,僵硬、酸麻、刺痛感、腰背痛、头痛、眼干、眼痛、视力下降、结膜发红等视觉问题。最严重的还是疲劳、抑郁症、心脑血管病,甚至“过劳死”等。脑力劳动者食养原则脑力劳动者除了要科学用脑外,还要注意营养,合理安排膳食,才有助于身体健康。脑力劳动者要遵循五大原则:1、注意必需脂肪酸的补充;2、维持血液的微碱性,多食碱性食物;3、多食葡萄糖类的碳水化合物;4、补充优质蛋白;5、注意摄入膳食纤维。而高强度的工作环境和过快的生活节奏又让人难以按时作息、饮食,而现有食品过于精细化,高热量、高蛋白的食物到处可见,易消化,营养组分高的粗粮制品在市场上并不多见。 因此,通过饮食来补充人脑所消耗的营养,同时可以调整饮食结构,补充人体必需的氨基酸,矿物质等,能提高人体的免疫力,增强抵抗力,补脑益气,有更好的精力和心态去面对现代化社会的挑战。
发明内容
本发明的目的是针对上述现有技术不足而提出一种能通过日常饮食来平衡身体营养,并能达到健脑益智的目的。
本发明是采用以下技术方案实现的:
本发明研制的健脑益智的食品,由以下重量份的原料组成:荞麦5-15份、玉米10-20份、山药5-10份、核桃5-8份和紫菜3-7份;
所述健脑益智的食品为速溶粉、速溶颗粒和速溶夹心多层颗粒,制备方法为:
步骤一、按所述重量份称取原料,进行清洗、烘干。
步骤二、将核桃粉碎过20-30目筛,混合得物料A,备用。
步骤三、将荞麦、玉米粗粉碎后,加入适量水和酵母,发酵2-4小时,45-55℃下烘干,粉碎过60-100目筛,得物料B,备用。
步骤四、将紫菜烘干后磨成60-100目的粉,得物料C,备用。
步骤五、将山药切成2-3cm小块,加适量水煮30-50分钟,至浆糊状,得物料D。
步骤六、将物料D干燥后粉碎与物料A、B、C混合均匀,分装得速溶粉。
步骤七:将物料A、B、C、D混合后,加入适量水分,挤压造粒,分装得速溶颗粒。
步骤八、以物料A为内壳,以物料D为粘结剂,采用滚筒造粒,将物料B和物料C分别包裹于物料A中上,即得速溶夹心多层颗粒。
上述步骤八也可以为:将物料B先包裹在第一层,物料C包裹在外层,或者将物料C包裹在第一层,物料B包裹在外层,或者将物料B和C混合均匀后包裹在内壳上。
所述山药在制备过程中不需去皮。
食用时可以用加适量水蒸熟或用开水调成糊状。
本发明的美容瘦身速溶粗粮制品中各组分的成分分析如下:
荞麦,拉丁学名(Fagopyrum esculentum),是蓼科荞麦属植物,根据中国医学科学院卫生研究所对中国主要粮食的营养成分分析, 荞麦面粉的蛋白质含量明显高于大米、小米、小麦、高粱、玉米面粉及糌粑。荞麦面粉含18种氨基酸,氨基酸的组分与豆类作物蛋白质氨基酸的组分相似。脂肪含量也高于大米、小麦面粉和糌粑。荞麦的营养成分主要是丰富的蛋白质;B族维生素;芦丁类强化血管物质;矿物营养素;丰富的植物纤维素等。最近研究显示:经常食用荞麦不易引起肥胖症,因为荞麦含有营养价值高、平衡性良好的植物蛋白质,这种蛋白质在体内不易转化成脂肪,所以不易导致肥胖。另外荞麦中所含的食物纤维是人们常吃主食品面和米的八倍之多,具有良好的预防便秘作用,经常食用对预防大肠癌和肥胖症有益。荞麦有防治高血压、冠心病的作用,同时又防治糖尿病的作用,进一步研究发现,荞麦之所以能降血糖,与荞麦中所含的个元素有关,茎叶:降压,止血。适用于高血压,毛细血管脆弱性出血,防治中风,视网膜出血,肺出血。种子:健胃,收敛。用于止虚汗。炒香研末,外用收敛止汗,消炎。【摘录】《全国中草药汇编》
玉米,拉丁学名(zea mays),别名玉蜀黍、包谷、苞米、棒子;粤语称为粟米,属于禾本科,黍亚科,玉蜀黍属,玉米。玉米的代谢能为14.06MJ/kg,高者可达15.06MJ/kg,是谷实类饲料中最高的。这主要由于玉米中粗纤维很少,仅2%;而无氮浸出物高达72%,且消化率可达90%;另一方面,玉米的粗脂肪含量高,在3.5%至4.5%之间。玉米为一年生禾本科植物,又名苞谷、棒子、六谷等。据研究测定,每100克玉米含热量106千卡,纤维素2.9克,蛋白质4.0克,脂肪1.2克,碳水化合物22.8克,另含矿物质元素和维生素等。玉米中含有的粗纤维,比精米、精面高4-10倍。玉米中还含有大量镁,镁可加强肠壁蠕动,促进机体废物的***。玉米上述的成份与功能,对于减肥非常有利。玉米成熟时的花穗玉米须,有利尿作用,也对减肥有利。 玉米可煮汤代茶饮,也可粉碎后制作成玉米粉、玉米糕饼等。膨化后的玉米花体积很大,食后可消除肥胖人的饥饿感,但食后含热量很低,也是减肥的代用品之一。玉米中的叶黄素和玉米黄质,是强大的抗氧化剂,能够保护眼睛中叫做黄斑的感光区域,预防老年性黄斑变性和白内障的发生。玉米中含有多种抗癌因子,如谷胱甘肽、叶黄素和玉米黄质、微量元素硒和镁等。谷胱甘肽能用自身的“手铐”铐住致癌物质,使其失去活性并通过消化道排出体外。它又是一种强力的抗氧化剂,可以加速老化的自由基失去作用,是人体内最有效的抗癌物。玉米中含有丰富的烟酸,烟酸是葡萄糖耐量因子(GTP)的组成物,是可增强胰岛素作用的营养素,所以,用玉米替代主食,有助于血糖的调节。玉米须不仅可降低血液黏稠度,并可增加血中凝血酶原,加速血液凝固,而且,玉米须的发酵制剂有显著的降低血糖作用。
山药,拉丁学名(Dioscorea opposita),别名怀山药 、淮山药 、土薯、山薯、山芋、玉延,薯蓣科 薯蓣属山药种,【性味与归经】味甘,性平。归脾、肺、肾经。【功能与主治】补脾养胃,生津益肺,补肾涩精。用于脾虚食少,久泻不止,肺虚喘咳,肾虚遗精,带下,尿频,虚热消渴。1、健脾益胃、助消化:山药含有淀粉酶、多酚氧化酶等物质,有利于脾胃消化吸收功能,是一味平补脾胃的药食两用之品。不论脾阳亏或胃阴虚,皆可食用。临床上常与胃肠饮同用治脾胃虚弱、食少体倦、泄泻等病症。2、滋肾益精:山药含有多种营养素,有强健机体,滋肾益精的作用。大凡肾亏遗精,妇女白带多、小便频数等症,皆可服之。3、益肺止咳:山药含有皂甙、黏液质,有润滑,滋润的作用,故可益肺气,养肺阴,治疗肺虚痰嗽久咳之症。4、降低血糖:山药含有粘液蛋白,有降低血糖的作用,可用于治疗糖尿病,是糖尿病人的食疗佳品。5、延年益寿:山药含有大量的黏液蛋白、维生素及微量元素,能有效阻止血脂在血管壁的沉淀,预防心血疾病,取得益志安神、延年益寿的功效;6、抗肝昏迷:近年研究发现山药具有镇静作用,可来抗肝昏迷。
核桃,拉丁学名(Juglans regia),性味:甘,平。归脾、胃、肾经。功效:补脑养血,补肾,健脾,下逆气,止久渴。脂肪含量高达 46.5%,蛋白质21.2%,糖22.3%。它含有丰富的油脂,可以润肠通便,润肤美容,延缓衰老。
紫菜,拉丁学名 (Porphyra),紫菜营养丰富,其蛋白质含量超过海带,并含有较多的胡萝卜素和核黄素。每100g干紫菜含蛋白质24~28g、脂肪0.9克、碳水化合物31~50g、钙330毫克、磷440毫克、铁32毫克、胡萝卜素1.23毫克、核黄素2.07毫克、尼克酸5.1毫克、丙氨酸3.4g、谷氨酸3.2g、甘氨酸2.4g、白氨酸2.6g、异白氨酸1.4g,其蛋白质、铁、磷、钙、核黄素、胡萝卜素等含量居各种蔬菜之冠,故紫菜又有“营养宝库”的美称。紫菜味甘、咸,性凉。能软坚散结,清热化痰,利尿。

所述速溶粗粮制品为速溶粉、速溶颗粒和速溶夹心多层颗粒。

步骤一、按所述重量份称取原料,进行清洗、烘干;
步骤二、将核桃粉碎过20-30目筛,混合得物料A,备用;
步骤三、将荞麦、玉米粗粉碎后,加入适量水和酵母,发酵2-4小时,45-55℃下烘干,粉碎过60-100目筛,得物料B,备用;
步骤四、将紫菜烘干后磨成60-100目的粉,得物料C,备用;
步骤五、将山药切成2-3cm小块,加适量水煮30-50分钟,至浆糊状,得物料D;
步骤六、将物料D干燥后粉碎与物料A、B、C混合均匀,分装得速溶粉;
