Abstract
本发明公开了一种天麻刺梨糕,以贵州天麻、刺梨为主要原料,以苹果为主要辅料,并配以食品级胶凝剂及调味料制成,其配方配比如下:刺梨原汁15-25份、天麻粉1-2份、苹果汁10-12份、木糖醇7-9份、白砂糖7-9份、柠檬酸0.1-0.3份、复合胶1.5—1.8份,水调至100份;选用上等刺梨,清洗后进行打浆,将天麻粉、果浆、复合胶凝剂混合加水调配,经熬煮成熟后浇盘、冷却、烘干、成型,冷却后采用充气包装检验入库;本发明工艺简单,易于工业化生产,产品酸甜可口,将天麻与具有维C之王的刺梨相结合,不仅可以补充维C,同时将天麻营养功效应用到产品中,拓展了休闲健康食品的市场,具有良好的市场前景。
Description
技术领域
本发明涉及休闲食品加工技术,具体的是一种天麻刺梨糕。
背景技术
天麻,原名赤箭,始载《本经》,宋代《开宝本草》始收载天麻之名。明代《本草纲目》中将二者合并称“天麻赤箭”。别名明天麻,还有神草(吴普本草)、独摇芝(抱扑子)、定风草(药性论)、合离草、离母(图经本草)之称。在我国一些古代医药文献中都给予了高度评价。早在2000多年前的《神农本草经》就把天麻列为上品。天麻为兰科植物天麻(Gastrodiaelata B1)的干燥块茎,是我国传统名贵中药材之一。近几年来以天麻为主制成的口服液、胶囊、天麻粉、饮片、保健品也越来越多。
我国对天麻的化学成分作了较***的研究,先后发现了酚类、有机酸类及植物中常见的甾醇类等几种类型:酚类有天麻素、天麻甙元(对羟基苯甲醇) 、对羟基苯甲醛等,其中天麻素是天麻的主要成分,其含量高达0. 33 %~0. 67 % ;有机酸类有柠檬酸、柠檬酸单甲酯、柠檬酸双甲酯、琥珀酸、棕榈酸、L 一焦谷氨酸等;甾醇类有β谷甾醇,豆甾醇和胡萝卜甙等。天麻含有一定的微量元素,其中以Ca含量最高,Fe、Zn、Mn、Cu、Se 次之;另外,天麻还含有7 种必需氨基酸(Thr ,Val ,Met ,Leu ,Phe ,Lys , Ile) ,这些人体必须的微量元素和氨基酸可对延缓衰老和防治疾病有一定的效果。
长期医学研究表明天麻具有很高的药食作用功效:镇痛、镇静、抗惊厥、降低血压、明目、增智等功效;在临床上常有:天麻川芎丸、川芎天麻茶、天麻洗药方、天麻丸、天麻杜仲胶囊等。在膳食方面常有:天麻猪脑粥、天麻炖猪脑、天麻钩藤汤冲藕粉、天麻炖甲鱼、天麻肉片汤、天麻鲤鱼、天麻煮鸡、天麻竹沥粥、天麻鱼头、天麻炖鸡、天麻石决明猪脑汤、天麻陈皮炖猪脑、天麻沙锅鱼头、天麻鸭子、天麻蛋、天麻钩藤白蜜饮、天麻烧牛尾等,天麻具有更高的食用价值。
刺梨的药食作用价值也很高,其花、叶果、籽可入药,有健胃、消食、滋补,止泻的功效。特别是刺梨富含超氧化物歧化酶(简称SOD),SOD是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化***和各种肿瘤疾病防治方面,应用十分广泛。 刺梨的果实同时也是加工保健食品的上等原料,成熟的刺梨肉质肥厚、味酸甜、果实富含糖、维生素、胡萝卜素、有机酸和20多种氨基酸、10余种对人体有益的微量元素,以及过氧化物歧化酶。尤其是维生素C含量极高,是当前水果中最高的,每100克鲜果中含量841.58~3541.13毫克,是柑橘的50倍,猕猴桃的10倍,具有“维生素C之王”的美称。
苹果是种低热量食物,每100克只产生60千卡热量;苹果中营养成份可溶性大,易被人体吸收,故有“活水”之称,有利于溶解硫元素,使皮肤润滑柔嫩。苹果中含有铜、碘、锰、锌、 钾等元素,人体如缺乏这些元素,皮肤就会干燥、易裂、奇痒。还含有苹果酸、奎宁酸、柠檬酸、酒石酸、单宁酸、果胶、纤维素、B族维生素、维生素C及微量元素可食用部分76%。把它敷在黑眼圈的地方,可以助于消除黑眼圈。
刺梨的开发利用主要是用于饮料或者酒的开发,中国专利201110174683.9公开了《一种刺梨果糕及其制备方法》,是应用刺梨果渣以及一些凝胶剂、调味剂配制而成,主要是解决刺梨果渣的利用问题。
中国专利200710114720.0《一种保健酒及制作方法》、02113478.1《一种保健酒及其制作方法》,公开了刺梨、天麻与其他药材的保健酒,92102233.6《刺梨健身茶的配制方法》,公开了刺梨、天麻与其他药材加茶叶泡制的健身茶。将刺梨与具有药食同源的物质结合来开发的产品,目前市场上尚无此类休闲食品。
发明内容
本发明的目的在于开发一种天麻刺梨糕,将其具有镇痛、镇静、抗惊厥、降低血压、明目、增智等功效的天麻与具有健胃、消食、滋补,止泻等功效的维C之王刺梨相结合,不仅可以补充维C,同时将天麻营养功效应用到产品中,将天麻、刺梨与苹果结合,开发一种同时具有水果的滋补养颜功效又有天麻特殊功效的休闲食品,不仅可以拓展天麻的开发前景,同时也填补了目前市场上天麻刺梨糕休闲食品产品空白的缺陷,解决当前市场上天麻刺梨糕休闲食品的需求。
本发明的目的及解决其主要技术问题是采用以下技术方案来实现的:一种天麻刺梨糕,以贵州天麻、刺梨为主要原料,以苹果为主要辅料,并配以食品级胶凝剂及调味料加工而成,其配方配比如下:刺梨原汁15-25份、天麻粉1-2份、苹果汁10-12份、木糖醇7-9份、白砂糖7-9份、柠檬酸0.1-0.3份、复合胶1.5—1.8份,水调至100份;通过以下制备工艺而成:
A、选料:精心挑选新鲜无虫害的刺梨鲜果和苹果,选择色泽好、无黑点、无开裂的天麻;
B、打浆、护色:将处理好的原料投入打浆机中进行打浆,最后在果浆中加入异抗坏血酸钠进行护色;
C、调配:将复合胶凝剂、木糖醇、白砂糖、果浆和天麻粉混合加水制成匀浆;
D、熬煮:将调配好的匀浆加入锅中加热浓缩,温度保持70℃-100℃,不断搅拌,防止焦糊;当浓缩至外加水分基本蒸发时作为浓缩终点,出锅前加入柠檬酸,熬煮片刻,离火;
E、浇盘、冷却:将熬煮好的原料浇于灭过菌托盘中,控制其厚度在6-10mm,固型后在无菌条件下冷却;
F、烘干:将冷却好的盛装原料托盘转入空气热能烤房中,于60℃烘烤18-20h至产品含水量达到15%-18%时取出;
G、包装:将成型的天麻刺梨糕趁热包装,并将包装好的天麻刺梨糕在60℃条件下杀菌10min,再自然降温到30℃,用冷风吹干表面水分后即为成品;
H、检验入库:成品经检验合格后,将其装箱入库。
上述的一种天麻刺梨糕,其中:所述的天麻粉是将天麻在温度为70-80℃的条件下烘干后粉碎,用100目的筛子过筛,制成粉末状备用。
上述的一种天麻刺梨糕,其中:所述的复合胶是卡拉胶与琼脂粉末复配而成,其重量比为1:2-1:3。
本发明与现有技术相比具有明显的优点和有益效果。由以上技术方案可知,本发明将具有镇痛、镇静、抗惊厥、降低血压、明目、增智等功效的天麻与具有健胃、消食、滋补,止泻等功效的维C之王刺梨相结合,不仅可以补充维C,同时将天麻营养功效应用到产品中,将天麻、刺梨与苹果结合,开发一种同时具有水果的滋补养颜功效又有天麻特殊功效的休闲食品,不仅可以拓展天麻的开发利用前景,解决当前市场上天麻刺梨糕的需求。工艺简单易于工业化生产,工艺操作严格执行食品标准,产品酸甜可口,符合现代人追求美食的健康理念,具有良好的市场前景。

具体实施方式
以下结合附图及较佳实施例,对依据本发明提出的一种天麻刺梨糕具体实施方式、特征及其功效,详细说明如后。
参见图1,一种天麻刺梨糕,以贵州天麻、刺梨为主要原料,以苹果为主要辅料,并配以食品级胶凝剂及调味料加工而成,其配方配比如下:刺梨原汁15-25份、天麻粉1-2份、苹果汁10-12份、木糖醇7-9份、白砂糖7-9份、柠檬酸0.1-0.3份、复合胶1.5—1.8份,水调至100份;通过以下制备工艺而成:
A、选料:精心挑选新鲜无虫害的刺梨鲜果和苹果,选择色泽好、无黑点、无开裂的天麻;

实施例1:
一种天麻刺梨糕,其产品配方:刺梨原汁15份、天麻粉1份、苹果汁10份、木糖醇7份、白砂糖7份、柠檬酸0.1份、复合胶1.5份,水调至100份,复合胶是卡拉胶与琼脂复配而成,其重量比为1:2;所述的天麻粉是将天麻在温度为80℃的条件下烘干后粉碎,用100目的筛子过筛,制成粉末状备用;按上述工艺制成。
实施例2:
一种天麻刺梨糕,其产品配方:刺梨原汁20份、天麻粉1.5份、苹果汁11份、木糖醇8份、白砂糖8份、柠檬酸0.2份、复合胶1.7份,水调至100份,复合胶是卡拉胶与琼脂复配而成,其重量比为1:2.5;所述的天麻粉是将天麻在温度为75℃的条件下烘干后粉碎,用100目的筛子过筛,制成粉末状备用;按上述工艺制成。
实施例3:
一种天麻刺梨糕,其产品配方:刺梨原汁25份、天麻粉2份、苹果汁12份、木糖醇9份、白砂糖9份、柠檬酸0.3份、复合胶1.8份,水调至100份,复合胶是卡拉胶与琼脂复配而成,其重量比为1:3;所述的天麻粉是将天麻在温度为70℃的条件下烘干后粉碎,用100目的筛子过筛,制成粉末状备用;按上述工艺制成。
以下是本发明天麻刺梨糕与普通刺梨糕各项指标的对比,如表1。

Claims (3)
1. 一种天麻刺梨糕,以贵州天麻、刺梨为主要原料,以苹果为主要辅料,并配以食品级胶凝剂及调味料加工而成,其配方配比如下:刺梨原汁15-25份、天麻粉1-2份、苹果汁10-12份、木糖醇7-9份、白砂糖7-9份、柠檬酸0.1-0.3份、复合胶1.5—1.8份,水调至100份;通过以下制备工艺而成:
A、选料:精心挑选新鲜无虫害的刺梨鲜果和苹果,选择色泽好、无黑点、无开裂的天麻;
B、打浆、护色:将处理好的原料投入打浆机中进行打浆,最后在果浆中加入异抗坏血酸钠进行护色;
C、调配:将复合胶凝剂、木糖醇、白砂糖、果浆和天麻粉混合加水制成匀浆;
D、熬煮:将调配好的匀浆加入锅中加热浓缩,温度保持70℃-100℃,不断搅拌,防止焦糊;当浓缩至外加水分基本蒸发时作为浓缩终点,出锅前加入柠檬酸,熬煮片刻,离火;

F、烘干:将冷却好的盛装原料托盘转入空气热能烤房中,于60℃烘烤18-20h至产品含水量达到15%-18%时取出;
G、包装:将成型的天麻刺梨糕趁热包装,并将包装好的天麻刺梨糕在60℃条件下杀菌10min,再自然降温到30℃,用冷风吹干表面水分后即为成品;
H、检验入库:成品经检验合格后,将其装箱入库。
2.根据权利要求1所述的一种天麻刺梨糕,其特征在于:所述的天麻粉是将天麻在温度为70-80℃的条件下烘干后粉碎,用100目的筛子过筛,制成粉末状备用。
3.根据权利要求1或2所述的一种天麻刺梨糕,其特征在于:所述的复合胶是卡拉胶与琼脂粉末复配而成,其重量比为1:2-1:3。
