本发明涉及食品加工技术领域,尤其涉及一种保健海鲜夹心豆干及其制备方法。
背景技术
豆干是一种历史悠久的民间小吃,也是豆腐干的简称,其主料是大豆,大豆中含有丰富的蛋白质、氨基酸、钙、磷、铁等营养物质。利用大豆可以制成各种营养丰富、食用方便的豆制食品。市场上的豆干虽然多种多样,但是都不具有保健功效,已不能满足消费者的需求。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种保健海鲜夹心豆干及其制备方法。
本发明是通过以下技术方案实现的:
一种保健海鲜夹心豆干,是由下述重量份的原料制成:黄豆200-220、黑芝麻5-7、海苔粉9-11、鱼油6-8、豆油9-11、熟绿豆芽5-6、生菜3-4、黄瓜3-4、盐3-4、醋2-3、辣椒粉2-3、生抽1-2、大豆分离蛋白4-5、菠萝冻干粉4-6、鱿鱼肉末12-15、里脊肉11-13、莴笋干鳗鱼糜8-10、葡萄干8-9、茴香1-2、苦橙叶1-2、香叶1-2、马鹿骨1-2、五味子1-2、木香1-2、营养液20-30;
所述的营养液由下列重量份原料制成:凤尾鱼8-12、生鸡蛋1-2、仙人掌果4-6、西瓜4-6、菠萝蜜4-6、襄荷5-7、紫背菜5-7、篓蒿4-5、菱角茎4-6、炒花生米5-8、山茶油6-8、榴莲核2-3、九里香1-2、三七花1-2、香茅草1-2;
所述的营养助剂的制备方法为:(1)将仙人掌果、西瓜和菠萝蜜制成果汁,将炒花生米磨成粉,与果汁混合;
(2)将襄荷、紫背菜、篓蒿、菱角茎晒干磨成粉后加水和生鸡蛋和成粉糊,将凤尾鱼放在粉糊内搅拌后,将凤尾鱼放入山茶油内油炸3-4分钟;
(3)将其它剩余原料混合后加8-9倍的水熬煮40-50分钟,过滤得药液,将(2)中所得物放入药液中浸泡2小时,烘干后磨成粉,与果汁混合得营养液。
保健海鲜夹心豆干的制备方法,包括以下步骤:(1)将黄豆制成生豆浆,并将生豆浆与黑芝麻、海苔粉混合;
(2)将熟绿豆芽、生菜和黄瓜混合并加入盐、醋、辣椒粉、生抽均匀搅拌;
(3)将鱿鱼肉末、里脊肉和莴笋干鳗鱼糜放在锅里加入鱼油爆炒10-13分钟,捣成肉酱再与大豆分离蛋白和菠萝冻干粉混合;
(4)将除营养液和豆油以外的其它剩余原料混合加9-10倍的水煎煮20-30分钟,过滤得药液;
(5)将生豆浆和营养液混合制成豆脑,破脑后与(3)中所得物混合制成豆干胚,豆干胚放在豆油里炸至金黄得豆干,将两片豆干叠放且在中间放有(2)中所得物,经压制得夹心豆干。
本发明的优点是:本发明将熟绿豆芽、生菜和黄瓜混合并加入盐、醋、辣椒粉、生抽混合调匀做夹心豆干的陷,美味可口,色香味俱全,加入的中药具有护肝、治疗偏食、保护视力的功效。

所述的营养液由下列重量份原料制成:凤尾鱼11、生鸡蛋2、仙人掌果5、西瓜5、菠萝蜜5、襄荷6、紫背菜6、篓蒿5、菱角茎6、炒花生米7、山茶油7、榴莲核3、九里香2、三七花2、香茅草1;
所述的营养助剂的制备方法为:(1)将仙人掌果、西瓜和菠萝蜜制成果汁,将炒花生米磨成粉,与果汁混合;

1.一种保健海鲜夹心豆干,其特征在于是由下述重量份的原料制成:黄豆200-220、黑芝麻5-7、海苔粉9-11、鱼油6-8、豆油9-11、熟绿豆芽5-6、生菜3-4、黄瓜3-4、盐3-4、醋2-3、辣椒粉2-3、生抽1-2、大豆分离蛋白4-5、菠萝冻干粉4-6、鱿鱼肉末12-15、里脊肉11-13、莴笋干鳗鱼糜8-10、葡萄干8-9、茴香1-2、苦橙叶1-2、香叶1-2、马鹿骨1-2、五味子1-2、木香1-2、营养液20-30;
