本发明公开了一种保健肉包子,其由面皮和鲜肉馅包好后蒸制而成,所述馅料包括鲜肉和调味料,在所述肉馅料内还加有枸杞和鲜山药,不仅增加新的保健营养成分,而且包子味道更鲜美。枸杞加在肉馅中有三方面的作用:(1)含有天然色素,美容养颜。(2)含有天然糖份,改善口味,(3)补气补血,天然补品。鲜山药加在肉馅中有三方面作用:(1)含有天然粘性滑液,大大增加了馅芯结块。(2)改善口感,吃口滑爽,(3)保健美容、磁补佳品。本发明由于在包子肉馅中添加了枸杞和鲜山药,人们长期食用,可以起到润肺补血,养胃健脾,补肾明目,滋润五脏,美容养颜,延年益寿的食疗作用。本保健肉包子特点:色泽白晰,物美价廉,营养丰富,吃口滑爽,馅鲜肉嫩,味道鲜美,美容养颜,强身健体,风味独特。
Description
一、枝术领域:
本发明涉及一种食品,特别是涉及一种将枸杞、鲜山药加入到肉馅中的保健包子。
二、技术背景:
包子是中国老百姓最喜欢的一种传统美食,也可以算是最具中国特色的餐饮之一。肉包子在我国已经有上千年的历史了,至今依然大受欢迎。
特别是在现代社会,随着人们生活节奏的加快,包子已经成为人们不可缺少的早餐食品。但是目前市场上供应的肉馅包子,基本上是千篇一律,均为常规的主辅料调制加工而成,其存在的问题是缺乏加入药食两用的保健药材,也就没有保健成份,因此营养成份有限,营养单一,而且食用后除基本营养外,无其它食疗保健营养。但包子作为我国十三亿人们最喜欢的大众化早餐,怎样才能提供营养丰富,维生素含量高,有多种营养和保健成份,并具有保健食疗作用的特色保健肉包子,为人们在整个上午的活动提供足够的能量,同时又能够通过长期的食用,促进人们身体健康,是目前需要解决的问题。
本保健肉包子其特征在于:
(1)、在馅芯中还加有枸杞,枸杞有安神养血,养肝明目,补肾益精,美容养颜,润肺益寿,滋阴壮阳,益智,强筋骨,泽肌肤,驻颜色等作用。
(2)、鲜山药有补脾养胃,生津润肺,补肾涩精,保健美容,润肤祛燥,补益强身。山药有滋精固肾、有滋润皮肤和毛发的功能,故有美容作用。山药高营养,低热量,助消化,降血糖,还是一种天然的减肥,健体之美食,滋补佳品。
三、发明内容:
为实现上述目的,针对现有技术存在的缺陷,本发明的目的是要解决现有技术存在的问题,提供一种维生素含量高,吃口滑爽,味道鲜美,多种营养,美容养颜,促进身体健康,并具有一定食疗保健作用的保健肉包子及其制作方法。
本发明解决其技术问题所采用的技术方案:一种特色保健肉馅包子,由面皮和鲜肉馅料包好后蒸熟而成。所述馅料包括鲜肉和调味料,在所述鲜肉馅料内还加有枸杞和鲜山药。
该保健肉包子的配方组成为:
猪五花肉、富强粉、鲜酵母、香葱末、鲜姜末、食盐、味精、鸡精、胡椒粉、白糖、料酒、香油、酱油、枸杞、鲜山药。
本发明将传统中医药学与现代营养保健学相结合。枸杞和山药都是药食两用的保健食品,在我国至少已有2000多年的历史,成书于东汉时期的《神农本草经》将枸杞、山药列于上品。
一、枸杞:
1、枸杞《中药大辞典》记载:枸杞《功用主治》滋肾,润肺,补肝,明目。治肝肾阴亏,腰膝酸软,头晕,目眩,目昏多泪,虚劳咳嗽,消渴,遗精。
2、枸杞《神农本草经》:“久服坚筋骨,轻身不老,耐寒暑。”
3、枸杞《本草纲目》:“滋肾,润肺,明目。”
4、枸杞《陶弘景》:“补益精气,强盛***。”
5、枸杞《药性论》:“能补益精诸不足,易颜色,变白,明目,安神。”
6、枸杞《食疗本草》:“坚筋耐老,除风,补益筋骨,能益人,去虚劳。”
7、枸杞《本草汇言》:“俗云枸杞善能治目,非治目也,能壮精益神,神满精足,故治目有效。又言治风,非治风也,能补血生营,血足风灭,故治风有验也。世俗但知补气必用参、芪、补血必用归、地,补阳必用桂、附,补阴必用知、柏,降火必用芩、莲,散湿必用苍、朴,祛风必用羌、独、防风,殊不知枸杞能使气可充,血可补,阳可生,阴可长,火可降,风湿可去,有十全之妙用焉。”
8、枸杞《本草通玄》:“枸杞,补肾益精,水旺则骨强,而消渴、目昏、腰膝痛无不愈矣。”“按枸杞平而不热,有补水制火之能,与地黄同功。”
9、枸杞《本草正》:“枸杞,味重而纯,故能补阴,阴中有阳,故能补气。所以滋阴而不致阴衰,助阳而能使阳旺。虽谚语云:离家千里,勿食枸杞,不过谓其助阳耳,似亦未必然也。此物微助阳而无动性,故用之以助熟地最妙。其功则明耳目,添精固髓,健骨强筋,善补劳伤,尤止消渴,真阴虚而脐腹疼痛不止者,多用神效。”
二、山药:
1、山药《中药大辞典》记载:山药《功用主治》健脾、补肺、固肾、益精。治脾虚泄泻、久痢、虚劳咳嗽、消渴、遗精、带下、小便频数。
2、山药《神农本草经》将山药列为上品,说它:“益气力、长肌肉。久服、耳目聪明、轻身、不饥延年。”
3、山药《本草纲目》概括了山药的五大功用:“益肾气、健脾胃、止泄痢、化痰涎、润皮毛”,山药可以治疗脾胃虚弱、泄泻、体倦、食少、虚汗等病症。”
4、山药《本草求真》:“本属食物,气虽温而却平,能补脾肺之阴,益肾强阴。”
5、山药《别录》:“主头面游风、风头、(一作头风)眼眩、下气、止腰痛、治虚劳赢瘦、充五脏、除烦热、强阴。”
6、山药《药性论》:“补五劳七伤、去冷风、止腰痛、镇心神、补心气不足、患人体虚赢、加而用之。”
7、山药《食疗本草》:“治头痛、助阴力。”
8、山药《日华子本草》“助五脏、强筋骨、长志安神、主泄精健忘。”
9、山药《朱震享》:“生捣贴肿硬毒、能消散。”
10、山药《伤寒蕴要》:“补不足、清虚热。”
11、山药《本草正》:“山药,能健脾补虚、滋精固肾、治诸虚百损、疗五劳七伤”。多食山药有“聪耳明目”、“不饥延年”、的功能、对人体健康非常有益、又被称为“食物药”。
(1)、山药:能健脾益胃,滋肾精;含有淀粉酶,多酚氧化酶等物质和多种营养素,有利于增强脾胃消化吸收功能,强健机体,滋肾益精。
(2)、山药:能益肺止咳,降低血糖;含有皂黏,黏液质,可益肺气,养肺,治疗肺虚痰嗽久咳之症。含有粘液蛋白,有降低血糖的作用,可用于治于糖尿病,是糖尿病的食疗佳品。
(3)、山药:能延年益寿;含有大量的蛋白质,维生素及微量元素,能有效阻止血脂在血管壁的沉淀,预防心血管疾病,有益志安神,延年益寿的功效。
本发明由于在肉包子的馅料中增加了枸杞和鲜山药。枸杞、山药是我国传统的中药材,又是我国传统药食两用保健食品,枸杞子性味:“味甘,平,无毒。”枸杞有降低血糖、抗动脉硬化,增强体质、延年益寿、促进肝细包新生等作用。据现代科学研究,枸杞含有多糖,甜菜碱、胡萝卜素,硫胺,核黄素、烟酸、抗坏血酸,钙、磷、铁、锗、铜、锌、锰等多种成分。山药性味:“味甘,温。平,无毒。”含有淀粉酶,多酚氧化酶等物质,有利于脾胃消化吸收功能,是一味平补脾胃的药食两用的佳品。许多古典医籍都对山药作了很高的评价。在民间,山药是人们所共知的滋补佳品。它含有蛋白质、糖类、维生素、脂肪、胆碱、淀粉酶等成份,还含有碘、钙、铁、磷、等人体不可缺少的无机盐和微量元素。现代科学分析,山药的最大特点是含有大量的黏蛋白。黏蛋白是一种多糖蛋白质的混合物,对人体具有特殊的保健作用,能防止脂肪沉积在心血管上,保持血管弹性,阻止动脉粥样硬化过早发生;可减少皮下脂肪堆积。山药高营养,低热量,是助消化、降血糖的佳品、还是一种天然的减肥、健体之美食。山药是一种非常理想的减肥健美食品,是一种高营养、低热量的食品,而且对于女士来说还有丰胸的功效。
将枸杞和鲜山药加入保健肉包子馅中,使包子含有补益精气,强身健体等成份,人们长期食用,可起到养胃健脾,滋润五脏,明目安神,生津益肺,补肾固精,坚筋耐老,补益筋骨,补五劳七伤,止腰痛,镇心神,补心气不足,延年益寿等作用,是滋补佳品。
四、实施例:一种保健肉包子
用料:富面粉5000克,鲜酵母80克,猪五花肉5000克,香葱末150克,鲜姜末150克,食盐150克,味精25克,鸡精30克,胡椒粉20克,白糖450克,香油150克,枸杞180克,山药600克,酱油、料酒、水适量。
制作工艺流程:
(1)面团:鲜酵母用少许水化开,倒入面粉中拌匀。揉好的面团盖湿布醒发至可用,发好的面团揉搓至内部无气体光滑的面团。
(2)拌馅:把猪五花肉洗净斩成肉酱后倒入缸中,放入食盐、白糖、味精、鸡精、料酒、胡椒粉、香油、将油、枸杞末、鲜山药末,朝一个方向搅拌至调料全部吸进肉馅中为止,再加入部分清水,朝一个方向搅拌至水全部吃进,然后再加入部分清水,顺一个方向搅打上劲,分多次加入清水,直到清水被完全吸入肉馅中,肉馅中加葱姜末拌匀,拌透后静放十多分钟,让肉继续吸水发涨,放入冰箱中冷藏1小时后取出备用。(生姜,香葱均切末。枸杞,鲜山药打成末备用)
3、揉匀的面团搓成长条,切成剂子,将剂子按扁,擀成中间厚,边缘薄的包子皮,包子皮中放入馅料,用手捏成包子,将包子生坯收口成鲤鱼嘴状。包子生坯加枸杞占缀。盖湿布醒20分钟,装屉大火烧开后转小火蒸熟取出即可。
4、产品特点:色泽白晰,馅鲜肉嫩,吃口滑爽,味道鲜美,营养丰富,强身保健,美容养颜,风味独特。

Claims (4)
1.一种保健肉包子,它是由一种普通肉馅包子添加枸杞和鲜山药后制成特色保健肉包子。在包子肉馅中而加入枸杞和山药不仅增加新的营养成分,而且包子味道更加鲜美。特点是增加新的保健成分,使包子含有多种保健成分和营养,确实是包子的精品。包子是由面皮和鲜肉馅芯包好后蒸熟而成。皮面是由面粉、鲜酵母和水调制而成的,馅芯是由鲜肉、香葱末、鲜姜末、食盐、、鸡精、胡椒粉、白糖、料酒、香油、酱油、枸杞、鲜山药调制而成的,其特征是:在鲜肉馅芯中还加有枸杞和鲜山药。
2.原辅实物配比用料:富面粉5000克,鲜酵母80克,猪五花肉5000克,香葱末150克,鲜姜末150克,食盐150克,味精25克,鸡精30克,胡椒粉20克,白糖450克,香油150克,枸杞180克,山药600克,酱油、料酒、水适量。
3.根据权利要求书1所述的特色保健肉包子的制作工艺流程:
(1)面团:鲜酵母用少许水化开,倒入面粉中拌匀。揉好的面团盖湿布醒发至可用,发好的面团揉搓至内部无气体光滑的面团。
(2)拌馅:把猪五花肉洗净斩成肉酱后倒入缸中,放入食盐,白糖,味精,鸡精,料酒,胡椒粉,香油,将油,枸杞末,鲜山药末,朝一个方向搅拌至调料全部吸进肉中为止,再加入部分清水,朝一个方向搅拌至水全部吃进,然后再加入部分清水,顺一个方向搅打上劲,分多次加入清水,直到清水被完全吸入肉馅中。
(3)拌葱姜:肉馅中加葱姜末拌匀,拌透后静放十多分钟,让肉馅继续吸水发涨,放入冰箱中冷藏1小时后取出备用。(生姜,香葱均切末。枸杞,鲜山药打成末备用)。
(4)揉匀的面团搓成长条,切成剂子,将剂子按扁,擀成中间厚,边缘薄的包子皮,包子皮中放入馅料,用手捏成包子,将包子生坯收口成鲤鱼嘴状。包子生坯加枸杞占缀。盖湿布醒20分钟,装屉大火烧开后转小火蒸1`0分钟取出即可。
4.产品特点:色泽白晰,馅鲜肉嫩,吃口滑爽,营养丰富,味道鲜美,物美价廉,美容养颜,强身健体,风味独特。
由于采用了上述方法,工艺,人们吃包子时便吃进了枸杞和山药丰富的多种营养成分,而且具有极高的保健价值,对人们的健康长寿非常有益,是现代人们所需求的绿色保健食品。
综合上面所述,本发明能利用新颖的配方,制作出一种全新口味特色保健肉包子,确实给人们带来一种前所未有的保健食品,同时带来全新的享受。以上所述仍是本发明的具体实施及所运用的发明创新枝术和配方的原理。
若以本发明的构想所作的等效改变,其所产生的功能作用仍未超出权利要求书和说明书所涵盖的精神,均应在本发明的保护范围内。
