Abstract
公开了一种全谷物营养食品,其由质量份数为:全脂大豆粉45-54%、黄小米粉9-12%、小麦胚芽粉2-3%、大麦苗粉22-25%、糙米粉12-18%、三氯蔗糖:0.12%,经混合均匀而成。其营养均衡,富含膳食纤维、蛋白质、不饱和脂肪酸、矿物质、各类维生素及抗氧化酵素。不同蛋白的互补使氨基酸较为平衡。本产品属碱性食品,可改善人体酸碱平衡,增强体质,优化机体功能,促进肠道蠕动调控血糖,减肥瘦身的作用,营养素全面,适合各类人群食用。

技术领域
本发明涉及一种全谷物营养食品,属食品技术领域。
背景技术
大豆含有丰富的优质蛋白、不饱和脂肪酸、钙及B族维生素,是居民膳食中优质蛋白质的重要来源,大豆蛋白质含量约为35%-40%,除蛋氨酸外,其余必需氨基酸的组成和比例与动物蛋白相似,而且富含谷类蛋白质缺乏的赖氨酸,是与谷类蛋白质互补的天然理想食品。
大豆中脂肪含量约为15%—20%,其中不饱和脂肪酸占85%,亚油酸高达50%,且消化率高,还含有较多磷脂。大豆中碳水化合物含量约为25%—30%,有一半是膳食纤维。每100g大豆中分别含有磷571mg、铁11mg、和钙367mg,明显多于谷类。大豆中维生素B1、维生素B2和烟酸等B族维生素含量也比谷类多数倍,并含有一定数量的胡萝卜素和丰富的维生素E。
小米的氨基酸中缺乏赖氨酸,而大豆的氨基酸中富含赖氨酸,可以补充小米的不足,小米维生素B1的含量位居所有粮食之首,除了丰富的铁质外,小米也有蛋白质,复合维他命B、钙质、钾、纤维等等;小米因富含维生素B1、B12等,具有防止消化不良及口角生疮的功效;小米具有防止反胃、呕吐的功效;还具有滋阴养血的功能,可以使产妇虚寒的体质得到调养,帮助她们恢复体力;小米具有减轻皱纹、色斑、色素沉着的功效。小米中所含的锌,是维护性腺健康的微量元素,能使性器官和***发育健全;所含的锰,能维持生殖功能健康正常;所含的硒,有利于谷胱甘肽的生成,而谷胱甘肽能改善性功能;所含的铜,是维护生殖健康所必需的微量元素。铜能维持正常的生殖功能和生长发育,孕妇摄入足够量的铜,能避免早产;所含的碘,系合成甲状腺激素必不可少的元素,能维持性的正常发育及性功能正常。妊娠期妇女摄取足够的碘而维持甲状腺功能正常。可避免胎儿痴呆或智力低下或骨骼发育延缓或成为侏儒症患者。
小麦胚芽是整个麦粒营养价值最高的部分,含有蛋白质27.0%~30.5%、脂肪10.5%~13.0%、可溶性无氮物40.0%~47.0%、粗纤维2.0%~2.2%、灰分4.0%~5.0%、水分9.5%~11.5%。除了几种主要的营养素外,还蕴藏着50多种人体所需丰富营养及一些还未被当今科学发现的微量生理活性成分,具有极高的营养价值和药用价值,小麦胚芽的蛋白质含量为31%以上,是一种优质蛋白质。含有人体必需的8种氨基酸,特别是赖氨酸的含量占18.5%;小麦胚芽中亚油酸的含量占60%,其中80%是多不饱和脂肪酸,而亚油酸正是人体三种必需脂肪酸中最重要的一种,具有降低血脂,防止动脉粥样硬化的作用。
大麦苗粉是“碱性食品之王”,含有大量的维生素C、β—胡萝卜素和抗氧化酵素,长期食用可改善酸性体质,净化血液、促进新陈代谢,具有增强肌体抗感染、抗菌、镇痛等作用,长期食用可碱化血液及尿液,增加尿酸***,从而有效地降低痛风发作。其中所含钾、镁、钙等矿物质可起到舒缓压力,脱离亚健康状态,推迟或改善更年期的作用;大麦苗粉中大量抗氧化酵素和膳食纤维的排毒作用可以保肝、护肝、预防肝炎,促进肠道蠕动,改善了大便干结、便秘等问题;能限制部分糖和脂肪的吸收,并使体内脂肪消耗增加,有效控制肥胖,防止动脉硬化,使血压稳定,对糖尿病、心脑血管疾病有良好改善作用;以低温干燥法制成的大麦苗粉比其它食品含有更丰富的矿物质、维他命。如:钾含量同比香蕉多出25倍,钙比牛奶多出10倍,铁比菠菜多出5倍,镁比小麦面粉多出6倍,及于其它食物找不到的微量元素锌。而维他命方面,维他命B1比蕃茄多出16倍,维他命B2比生菜多出45倍,维他命C比橙多出7倍,维他命E比小麦面粉多出20倍。其它营养素如叶酸比菠菜多出8倍。
糙米是指除了外壳之外都保留的全谷粒。即含有皮层、糊粉层和胚芽的米,糙米中米糠和胚芽部分含有丰富的维生素B和维生素E,能提高人体免疫功能,促进血液循环,还能帮助人们消除沮丧烦躁的情绪,使人充满活力。此外,糙米中钾、镁、锌、铁、锰等微量元素含量较高,有利于预防心血管疾病和贫血症。它还保留了大量膳食纤维,可促进肠道有益菌增殖,加速肠道蠕动,软化粪便,预防便秘和肠癌;膳食纤维还能与胆汁中胆固醇结合,促进胆固醇的排出,从而帮助高血脂症患者降低血脂。
随着人们对健康的关注,食物的营养高低越来越受重视,但大部分人关心的往往是某种单一的食物有什么营养,而忽略了谷物杂食的充分互补是获得各种营养素的保证,这也是人的消化***结构所决定的进食原型。防治文明病的核心措施特别是蛋白质和热能的缺乏,使机体处于负氮平衡,不断消耗体内蛋白质而转化为热能以供需要,这就会引起代谢紊乱、生长发育障碍、免疫功能低下,导致恶性营养不良的发生。若某些营养素长期缺乏,就可引起各种营养素的缺乏症。
全谷物营养食品依谷物互补原理,大豆、谷类食品单独食用时,其蛋白质的生物价分别为64和67,两类食物若按33%和67%的比例混合食用,其蛋白质的生物价可提高到77,超过了牛肉(生物价76)。小米缺乏赖氨酸,蛋氨酸和色氨酸含量丰富;大豆蛋白质含蛋氨酸低,而赖氨酸、色氨酸含量却较高。这几种食物具有很好的互补性,混合食用时蛋白质的营养价值超过了牛奶。通过对几种谷物进行有效组合、使营养素更趋均衡,并添加富含抗氧化酵素的天然大麦苗粉,起到可改善人体酸碱平衡,增强体质,优化机体功能,促进肠道蠕动调控血糖,减肥瘦身的作用,营养素全面,适合各类人群食用。
发明内容
本发明为了解决现有技术中的不足而提供一种营养均衡、富含膳食纤维、蛋白质、不饱和脂肪酸、矿物质、类维生素及抗氧化酵素的全谷物营养食品,可改善人体酸碱平衡,增强体质,优化机体功能,促进肠道蠕动调控血糖,减肥瘦身作用且营养素全面的全谷物营养食品。
为达到上述目的,本发明采用的技术方案为:
全谷物营养食品,包括质量份数为:全脂大豆粉45-54%、黄小米粉9-12%、小麦胚芽粉2-3%、大麦苗粉22-25%、糙米粉12-18%、三氯蔗糖0.12%。

本发明具有如下有益效果:提高了大豆蛋白及谷类蛋的生物效价,可改善人体酸碱平衡,增强体质,优化机体功能,促进肠道蠕动调控血糖,减肥瘦身的作用,营养素全面,适合各类人群食用。
具体实施方式
实施例1
一种全谷物营养食品,称取全脂大豆粉54g、黄小米粉9g、小麦胚芽粉2.88g、大麦苗粉22g、糙米粉12g、三氯蔗糖0.12g,将上述谷物粉混合均匀,加入开水,冲调搅匀,色泽淡绿,具有清淡的豆香味,口感细腻,无粗糙感。
实施例2
一种全谷物营养食品,称取全脂大豆粉50g、黄小米粉10g、小麦胚芽粉3g、大麦苗粉24g、糙米粉12.88g、三氯蔗糖0.12g,将上述谷物粉混合均匀,加入开水,冲调搅匀,色泽淡绿,具有清淡的麦香味,口感细腻,无粗糙感。
实施例3
称取质量份数为:全脂大豆粉45g、黄小米粉12g、小麦胚芽粉:2.8g、大麦苗粉23g、糙米粉:17.08g、三氯蔗糖0.12g,将上述谷物混合均匀,加入开水,冲调搅匀,色泽淡绿,具有清淡的焦香味,口感细腻,无粗糙感。
