Abstract
本发明公开了一种西瓜柚子皮年糕,是由下述重量份的原料制成:黑糯米180-200、西瓜皮20-25、柚子皮20-25、荞麦叶8-10、熟地黄3-5、枸骨根1-2、公丁香2-3、桂枝1-2、麦冬2-3、仙草2-3、黄苓1-2、葛根3-5、紫薯粉20-30、全脂牛乳粉10-15、洋槐蜜7-8、营养液3-4;本发明将黑糯米与竹炭粉混合炒制,使糯米含有竹香,更降低了糯性,添加西瓜皮、柚子皮、荞麦叶使得年糕富含膳食纤维,促进胃肠消化,成品年糕香甜糯软、口感丰富,具有健脾消食、理气化痰、润肠通便、润肤美白的功效。

技术领域
本发明涉及一种保健年糕,尤其涉及一种西瓜柚子皮年糕及其制备方法。
背景技术
年糕是一种传统美食,是用黏性大的米或米粉蒸熟制成,其主要成分为淀粉和水,过于单一,并且不易消化,保健功能不显著,为此本发明提供一种多口味、富有口感、营养均衡、保健功能突出的年糕食品。
发明内容
本发明克服了现有技术不足,提供了一种西瓜柚子皮年糕及其制备方法。
本发明是通过以下技术方案实现的:
一种西瓜柚子皮年糕,是由下述重量份的原料制成:
黑糯米180-200、西瓜皮20-25、柚子皮20-25、荞麦叶8-10、熟地黄3-5、枸骨根1-2、公丁香2-3、桂枝1-2、麦冬2-3、仙草2-3、黄苓1-2、葛根3-5、紫薯粉20-30、全脂牛乳粉10-15、洋槐蜜7-8、营养液3-4;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:3-4。
一种西瓜柚子皮年糕制备方法,包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制10-15分钟,取出与去核的乌梅混合,加入1-2倍新鲜椰肉磨成浆,得到营养液;
(2)将黑糯米拣杂淘洗干净后晾干,送入锅中,加入适量竹炭粉,文火翻炒至熟香,筛去竹炭粉,加入3-4倍温水磨浆,压滤脱水,得到糯米粉;
(3)将新鲜西瓜皮去绿皮去红瓤后洗净,柚子皮去外皮后洗净,与荞麦叶混合,加入3-4倍温水打浆,加入浆重1-2%的果浆酶,在30-35℃下酶解3-4小时,灭酶后过滤,滤液冷冻干燥,得到冻干粉;
(4)将熟地黄、枸骨根、公丁香等中药原料混合粉碎,加入8-10倍清水,煮沸后小火煎煮60-70分钟,过滤,滤液喷雾干燥,得到中药粉;
(5)将上述营养液、糯米粉、冻干粉、中药粉与剩余全部原料混合均匀,送入蒸锅蒸熟,取出送入年糕成型机中挤压成型,灭菌包装,得到成品。
与现有技术相比,本发明的优点是:
本发明将黑糯米与竹炭粉混合炒制,使糯米含有竹香,更降低了糯性,添加西瓜皮、柚子皮、荞麦叶使得年糕富含膳食纤维,促进胃肠消化,成品年糕香甜糯软、口感丰富,具有健脾消食、理气化痰、润肠通便、润肤美白的功效。

下面结合实施例对本发明作进一步详细描述:
实施例:
一种西瓜柚子皮年糕,是由下述重量(斤)的原料制成:
黑糯米200、西瓜皮25、柚子皮25、荞麦叶10、熟地黄5、枸骨根2、公丁香3、桂枝2、麦冬3、仙草3、黄苓2、葛根5、紫薯粉30、全脂牛乳粉15、洋槐蜜8、营养液4;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:4。
一种西瓜柚子皮年糕制备方法,包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制15分钟,取出与去核的乌梅混合,加入1倍新鲜椰肉磨成浆,得到营养液;
(2)将黑糯米拣杂淘洗干净后晾干,送入锅中,加入适量竹炭粉,文火翻炒至熟香,筛去竹炭粉,加入4倍温水磨浆,压滤脱水,得到糯米粉;
(3)将新鲜西瓜皮去绿皮去红瓤后洗净,柚子皮去外皮后洗净,与荞麦叶混合,加入4倍温水打浆,加入浆重1%的果浆酶,在35℃下酶解3小时,灭酶后过滤,滤液冷冻干燥,得到冻干粉;
(4)将熟地黄、枸骨根、公丁香等中药原料混合粉碎,加入10倍清水,煮沸后小火煎煮70分钟,过滤,滤液喷雾干燥,得到中药粉;
(5)将上述营养液、糯米粉、冻干粉、中药粉与剩余全部原料混合均匀,送入蒸锅蒸熟,取出送入年糕成型机中挤压成型,灭菌包装,得到成品。
Claims (2)
1.一种西瓜柚子皮年糕,其特征在于是由下述重量份的原料制成:
黑糯米180-200、西瓜皮20-25、柚子皮20-25、荞麦叶8-10、熟地黄3-5、枸骨根1-2、公丁香2-3、桂枝1-2、麦冬2-3、仙草2-3、黄苓1-2、葛根3-5、紫薯粉20-30、全脂牛乳粉10-15、洋槐蜜7-8、营养液3-4;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:3-4。
2.一种如权利要求1所述的西瓜柚子皮年糕制备方法,其特征在于包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制10-15分钟,取出与去核的乌梅混合,加入1-2倍新鲜椰肉磨成浆,得到营养液;
(2)将黑糯米拣杂淘洗干净后晾干,送入锅中,加入适量竹炭粉,文火翻炒至熟香,筛去竹炭粉,加入3-4倍温水磨浆,压滤脱水,得到糯米粉;
(3)将新鲜西瓜皮去绿皮去红瓤后洗净,柚子皮去外皮后洗净,与荞麦叶混合,加入3-4倍温水打浆,加入浆重1-2%的果浆酶,在30-35℃下酶解3-4小时,灭酶后过滤,滤液冷冻干燥,得到冻干粉;
(4)将熟地黄、枸骨根、公丁香等中药原料混合粉碎,加入8-10倍清水,煮沸后小火煎煮60-70分钟,过滤,滤液喷雾干燥,得到中药粉;
(5)将上述营养液、糯米粉、冻干粉、中药粉与剩余全部原料混合均匀,送入蒸锅蒸熟,取出送入年糕成型机中挤压成型,灭菌包装,得到成品。
