背景技术
现有糕饼有的不分层,因其为面粉发酵,具有韧性,不易咀嚼且无香 酥松脆的口感,不适合幼小及老年阶层的人食用。有的分层后,口味不佳。
发明内容
本发明公开了一种千层饼制作方法,其特征在于,包括以下步骤:
a.将面粉加上加温水揉成面团,发酵十分钟,再加入适量的碱揉匀,掐成面坯备用;
b.将面坯擀成圆形的面皮,刷上油,折起再擀开呈圆形,光面向上 ;
c.从饼中心到任一处饼沿切割一刀,掀起饼沿再沿饼中心为中心点顺时针或逆时针卷起成圆锥体,将圆锥体的顶点摁下至底部,制成饼胚;
d.待蒸锅上气时,将饼坯摆入屉内,蒸熟,取下,用刀在饼中间横切一刀,将饼轻轻磕动,见起层时,码入盘内。
优选的,步骤(a)所述面坯重量为80克-150克。
优选的,步骤(b)所述面皮厚度为1-8mm。
优选的,步骤(c)所述蒸熟需旺火蒸20-30分钟.
与现有技术相比,本发明制作的千层饼分层效果极好,层多丝细,松绵不腻; 适合各年龄阶层的人食用。
具体实施方式
制作千层饼:
a.将面粉加上加温水揉成面团,发酵十分钟,再加入适量的碱揉匀,掐成100克面坯备用;
b.将面坯擀成圆形的2mm面皮,刷上油,折起再擀开呈圆形,光面向上 ;
c.从饼中心到任一处饼沿切割一刀,掀起饼沿再沿饼中心为中心点顺时针或逆时针卷起成圆锥体,将圆锥体的顶点摁下至底部,制成饼胚;
d.待蒸锅上气时,将饼坯摆入屉内,旺火20分钟蒸熟,取下,用刀在饼中间横切一刀,将饼轻轻磕动,见起层时,码入盘内。
做成的千层饼层层酥脆,口感极好。

1.一种千层饼制作方法,其特征在于,包括以下步骤:
a.将面粉加上加温水揉成面团,发酵十分钟,再加入适量的碱揉匀,掐成面坯备用;
b.将面坯擀成圆形的面皮,刷上油,折起再擀开呈圆形,光面向上 ;
c.从饼中心到任一处饼沿切割一刀,掀起饼沿再沿饼中心为中心点顺时针或逆时针卷起成圆锥体,将圆锥体的顶点摁下至底部,制成饼胚;
d.待蒸锅上气时,将饼坯摆入屉内,蒸熟,取下,用刀在饼中间横切一刀,将饼轻轻磕动,见起层时,码入盘内。
