Abstract

An aqueous phase (I to III) and a fatty phase (IV) are prepared separately; after that, the aqueous phase is emulsified in the fatty phase to form a water-in-oil emulsion (V). The aqueous phase is produced from milk-based raw materials with a pH value greater than 5.1, which are subjected to a membrane filtration giving a protein concentrate (I). The temperature of this protein concentrate is then increased to 80 to 105 DEG C (II), and then decreased to 55 to 38 DEG C (III); the protein concentrate is then emulsified in a fatty phase produced in the proportion of 35 to 65% of fatty phase. The product can then be pasteurised, cooled and packaged (VI). A margarine having a low calorific value and a high protein content can thus be obtained. <IMAGE>
