Bekannte Verfahren zum Abrippen von Fleisch erfordern einen grossen Kraftaufwand und erlauben kein rationelles Arbeiten. Die Erfindung hat sich daher die Aufgabe gestellt, eine Einrichtung zu schaffen, welche ein rasches und müheloses Entfernen von Rippen aus Fleisch gestattet. Die erfindungs- gemässe Einrichtm hebt sich dadurch hervor, dass sie ein an einer Arbeitsplatte gelenkig montierter Ausrippapparat mit einer hydraulisch oder pneumatisch betätigbaren, in einem Zylinder geführten Kolbenstange aufweist, dass am Ende der Kolbenstange ein Schlingenhalter mit daran angeordneter Schlinge vorgesehen ist, das Ganze derart, dass in einer mindestens teilweise ausgezogenen und über eine Rippe geschwenkten Stellung des Apparates die Schlinge über ein freies Rippenende stülpbar ist,
und dass der Apparat anschliessend in eine eingezogene Stellung bringbar ist, welche Bewegung die vollständige Trennung der Rippe vom Fleisch durch die Schlinge ermöglicht.
Anhand der Zeichnung werden nachfolgend Ausführungsbeispiele der Erfindung näher beschrieben. Es zeigen:

Nach dem Schlachten von Schweinen werden die Brustpartien für das Entrippen vorbereitet. Bei den zum Entrippen bestimmten Fleischstücken 11 müssen meist zuerst die Rippen 15 abgedeckt werden. Anschliessend können die Fleischstücke 11 auf die Arbeitsplatte 10 gelegt werden. Ein auf der Platte 10 lösbar befestigter Winkelanschlag 6 und ein ebenfalls lösbar auf der Platte angebrachtes Nagelblech 5 dienen dazu, das Fleisch Ii in einer bestimmten Lage unverrückbar zu halten.
Der Anschlag 6 und das Nagelblech 5 sind mittels Flügelmuttern 8 mit der Platte 10 verbunden.
DerAusrippapparat 18 ist mittels eines Kugelgelenkes 7 an einem starr an der Platte 10 befestigten Stab 17 gelenkig angeordnet. Der Apparat weist einen Hydraulikzylinder 4 mit darin längsgeführter Kolbenstange 3 auf. Am Ende der Kolbenstange 3 ist eine Schlingenhalter 2 mit Schlinge 1 angeordnet.
Am Schlingenhalter 2 ist ein Führungshandgriff 9 angebracht, damit der Halter 2 mit der Schlinge 1 über das Fleischstück 11 geschwenkt und in eine mindestens teilweise ausgezogene Stellung über eine Rippe 15 gebracht werden kann. Diese ausgezogene Stellung ist in der Ansicht der Fig. 1 gestrichelt dargestellt.
Wie aus der Detaildarstellung der Fig. 3 ersichtlich ist, kann nun die Schlinge 1 von Hand über das freie Ende 19 der Rippe 15 gestülpt werden. Nun wird der Apparat 18 hydraulisch in seine eingezogenen Stellung gefahren, was bewirkt, dass die Schlinge 1 unter der Rippe 15 zwischen letzterer und dem Fleisch 11 durchgezogen wird, wodurch die Rippe 15 vollständig vom Fleisch getrennt wird. Bei diesem Vorgang wird eine grosse Zugkraft auf das Fleisch 11 ausgeübt. Diese kann sich aber nicht auf der Platte 10 verschieben, weil es durch die Nägel 16 und den Anschlag 6 unverrückbar auf der Platte 10 gehalten ist. Die Nägel sind dabei zweckmässig etwa 5 gegen die Zugrichtung schräggestellt.
Damit beide Hände der Bedienungsperson zur Führung des Entrippapparates 18 und zum Niederdrücken des Fleisches 11 frei sind, wird der Apparat 18 zweckmässig durch den Fussschalter 20 betätigt. Eine Hydraulikeinheit 21 ist in der Fig. 1 nur schematisch angedeutet.
Bei einer weiteren Ausführungsform des Ausrippapparates 18 gemäss Fig. 5 ist ein Vibrator 14 auf der Kolbenstange 3 angeordnet, welcher dazu dient, das Lösen der Rippe 15 beim Durchziehen der Schlinge 1 zu erleichtern. Der Vibrator könnte auch im Halter 2 untergebracht werden. Die Vibration könnte auch durch eine Pulsation des Arbeitsmittels im Zylinder 4 erreicht werden.
Eine dritte Ausführungsform des Ausrippapparates 18 ist in Fig. 4 dargestellt. Die umlaufende Endlosschlinge 12, welche aus Stahldraht oder aus Kunststoff sein kann, wird durch eine mit einem Antrieb 13 versehene Rolle 22 bewegt. Die Schlinge 12 wird durch ein im Halter 2 untergebrachtes, verstellbares Gleichlaufgetriebe 23 teilweise gespannt. Bei dieser Ausführungsform mit umlaufender Schlinge 12 wird das Trennen der Rippe vom Fleisch ebenfalls erleichtert.
Die vorbeschriebene Einrichtung zum Entfernen von Rippen aus Fleisch erlaubt ein rascheres und rationelleres Arbeiten gegenüber bisherigen, bekannten Verfahren, welche einen erheblichen körperlichen Kraftaufwand erfordern. Die Bedienung der Einrichtung kann ohne weiteres durch eine weibliche Person erfolgen, welche nach kurzer Instruktion in der Lage ist, die Handhabung einwandfrei zu beherrschen.
PATENTANSPRUCH
Einrichtung zum Entfernen von Rippen aus Fleisch, dadurch gekennzeichnet, dass sie ein an einer Arbeitsplatte (10) gelenkig montierter Ausrippapparat (18) mit einer hydraulisch oder pneumatisch betätigbaren, in einem Zylinder (4) geführten Kolbenstange (3) aufweist, und dass am Ende der Kolbenstange (3) ein Schlingenhalter (2) mit daran angeordneter Schlinge (1, 12) vorgesehen ist, das Ganze derart, dass in einer mindestens teilweise ausgezogenen und über eine Rippe (15) geschwenkten Stellung des Ausrippapparates (18) die Schlinge (1, 12), über ein freies Rippenende (19) stiilpbar ist, und dass der Ausrippapparat (18) anschliessend in eine eingezogene Stellung bringbar ist, welche Bewegung die vollständige Trennung der Rippe (15) vom Fleisch (11) durch die Schlinge (1,
12) ermöglicht.
UNTERANSPRÜCHE
1. Einrichtung nach Patentanspruch, gekennzeichnet durch einen Anschlag (6) und ein Nagelblech (5) mit nach oben spitz vorstehenden Nägeln (16), welche Elemente (6, 16) entfernbar auf der Platte (10) angeordnet sind zwecks unverrückbarer Haltung des Fleisches (11) auf der Platte (10) beim Ausrippvorgang.
2. Einrichtung nach Patentanspruch, dadurch gekennzeichnet, dass der Ausrippapparat (18) durch ein Kugelgelenk (7) mit einem starr an der Platte (10) befestigten Stab (17) verbunden ist und einen Führungshandgriff (9) zu seiner Bedienung aufweist.
3. Einrichtung nach Patentanspruch, gekennzeichnet durch einen am Ausrippapparat (18) angeordneten Vibrator (14).
4. Einrichtung nach Patentanspruch, gekennzeichnet durch einen am Ausrippapparat (18) angeordneten Schlingenantrieb (13) und ein im Schlingenhalter (2) untergebrachtes Gleich laufgetriebe (23) zum Antreiben bzw. zum Spannen der umlaufenden Endlosschlinge (12).
5. Einrichtung nach Unteranspruch 1, dadurch gekennzeichnet, dass die Nägel (16) gegen die Zugrichtung schräggestellt sind.
6. Einrichtung nach Patentanspruch, dadurch gekennzeichnet, dass der Zylinder (4) ein Hydraulikzylinder ist, dessen Arbeitsflüssigkeit pulsiert.

Known methods for ripping meat require a great deal of force and do not allow efficient work. The invention has therefore set itself the task of creating a device which allows quick and easy removal of ribs from meat. The device according to the invention is distinguished by the fact that it has an unripping apparatus articulated on a worktop with a hydraulically or pneumatically actuated piston rod guided in a cylinder, so that at the end of the piston rod a loop holder with a loop is provided, the whole thing that in an at least partially extended position of the device and pivoted over a rib, the loop can be slipped over a free end of the rib,
and that the apparatus can then be brought into a retracted position, which movement enables the complete separation of the rib from the meat by the loop.
Exemplary embodiments of the invention are described in more detail below with reference to the drawing. Show it:

After pigs have been slaughtered, the breasts are prepared for the ribs. In the case of the pieces of meat 11 intended for stripping, the ribs 15 usually have to be covered first. The pieces of meat 11 can then be placed on the worktop 10. An angle stop 6 releasably attached to the plate 10 and a nail plate 5 also releasably attached to the plate serve to keep the meat Ii immovable in a certain position.
The stop 6 and the nail plate 5 are connected to the plate 10 by means of wing nuts 8.
The unripping apparatus 18 is articulated by means of a ball joint 7 on a rod 17 rigidly attached to the plate 10. The apparatus has a hydraulic cylinder 4 with a piston rod 3 guided longitudinally therein. A loop holder 2 with a loop 1 is arranged at the end of the piston rod 3.
A guide handle 9 is attached to the loop holder 2 so that the holder 2 with the loop 1 can be pivoted over the piece of meat 11 and brought into an at least partially extended position over a rib 15. This extended position is shown in dashed lines in the view of FIG.
As can be seen from the detailed illustration in FIG. 3, the loop 1 can now be slipped over the free end 19 of the rib 15 by hand. The apparatus 18 is now moved hydraulically into its retracted position, which has the effect that the loop 1 is pulled through under the rib 15 between the latter and the meat 11, whereby the rib 15 is completely separated from the meat. During this process, a great tensile force is exerted on the meat 11. However, this cannot move on the plate 10 because it is held immovably on the plate 10 by the nails 16 and the stop 6. The nails are expediently inclined about 5 against the direction of pull.
So that both hands of the operator are free to guide the stripping apparatus 18 and to press down the meat 11, the apparatus 18 is conveniently actuated by the foot switch 20. A hydraulic unit 21 is only indicated schematically in FIG. 1.
In a further embodiment of the unripping apparatus 18 according to FIG. 5, a vibrator 14 is arranged on the piston rod 3, which is used to facilitate the loosening of the rib 15 when the loop 1 is pulled through. The vibrator could also be accommodated in the holder 2. The vibration could also be achieved by pulsing the working medium in the cylinder 4.
A third embodiment of the unripping apparatus 18 is shown in FIG. The revolving endless loop 12, which can be made of steel wire or plastic, is moved by a roller 22 provided with a drive 13. The loop 12 is partially tensioned by an adjustable synchronism gear 23 accommodated in the holder 2. In this embodiment with a circumferential loop 12, the separation of the rib from the meat is also facilitated.
The device described above for removing ribs from meat allows faster and more efficient work compared to previous, known methods which require considerable physical effort. The device can be operated easily by a female person who, after brief instruction, is able to master the handling properly.
PATENT CLAIM
Device for removing ribs from meat, characterized in that it has a ripping apparatus (18) articulated to a work surface (10) with a hydraulically or pneumatically actuated piston rod (3) guided in a cylinder (4), and that at the end the piston rod (3) a loop holder (2) with a loop (1, 12) arranged thereon is provided, the whole in such a way that in an at least partially extended position of the unripping device (18) pivoted over a rib (15) the loop (1 , 12), can be stiilpbar over a free end of the rib (19), and that the unripping apparatus (18) can then be brought into a retracted position, which movement enables the complete separation of the rib (15) from the meat (11) by the loop (1
12) allows.
SUBCLAIMS
1. Device according to claim, characterized by a stop (6) and a nail plate (5) with upwardly pointed nails (16), which elements (6, 16) are removably arranged on the plate (10) for the purpose of immovable holding of the meat (11) on the plate (10) during the ripping process.
2. Device according to claim, characterized in that the Ausrippapparat (18) is connected by a ball joint (7) to a rigidly attached to the plate (10) rod (17) and has a guide handle (9) for its operation.
3. Device according to claim, characterized by a vibrator (14) arranged on the unripping apparatus (18).
4. Device according to claim, characterized by a loop drive (13) arranged on the unripping apparatus (18) and a synchronous gear (23) housed in the loop holder (2) for driving or tensioning the circulating endless loop (12).
5. Device according to dependent claim 1, characterized in that the nails (16) are inclined against the direction of pull.
6. Device according to claim, characterized in that the cylinder (4) is a hydraulic cylinder whose working fluid is pulsating.
