Verfahren zur Fermentation von Tabaken. Die Erfindung betrifft ein Verfahren zur Tabakfermentation durch gerichtete Gärung.
Sie geht von der Tatsache aus, dass drei verschiedene genetisch aufeinanderfolgende Aromate in einem und demselben Tabakblatt zu unterscheiden sind, nämlich das Aroma des geernteten unfermentierten Blattes, das Aroma des frisch vergorenen "fermentierten" Blattes und das Aroma des abgelagerten, zur Verarbeitung fertigen Blattes. Es ist also zu unterscheiden: 1. das primäre oder Pflanzenbukett, 2. das sekundäre oder Gärbukett, 3. das tertiäre oder Lagerbukett.
Die Verbesserung des sekundären Buketts ist Gegenstand der vorliegenden Erfindung. Vor Jahrzehnten wurde schon die Mög lichkeit angenommen, dass der Fermentations- vorgang des Tabaks eine Gärung sei und vor geschlagen, den Tabak mit bestimmten, in besonderer Weise gezüchteten Nikrolebe- wesen zu impfen und dadurch die Gärung zu richten. Diese Vorschläge hatten jedoch kei nen praktischen Erfolg, weil der Einfluss des Sauerstoffes auf den Gärungsvorgang ausser acht blieb. Das Gleiche gilt auch von allen seither vorgeschlagenen Neuerungen auf die sem Gebiete, z.
B. von dem Vorschlage, die Fermentation in abgeschlossenen Räumen oder Behältern vorzunehmen. Der in solchen Räumen oder Behältern, wenn auch in ge ringer Menge, vorhandene Sauerstoff reicht nach den Untersuchungen der Anmelder durchaus für das Wachstum aerober, das heisst die gerichtete Gärung verhindernder Nikrolebewesen hin.
Das trifft auch auf die bekannte Fermen tation von Tabak in gepressten Ballen zu. Die in diesen gepressten Ballen vorhandene Sauerstoffmenge reicht ebenfalls erfahrungs- gemäss hin, um aerobe Mikrolebewesen zum Wachsen zu bringen, was an dem hierbei häufig beobachteten Verbrennen des Tabaks und an der Schimmelbildung im Innern der Ballen erkennbar ist.
Der einmal gemachte Vorschlag. den Ta bak in einer 1Vasserstoff-Aintospli:ire zu be handeln, bezweckt lediglich eine ehoinische Beeinflussung dtireh Erhöhung der Wasser- stoffionenkonzentration, bezieht sich. aber nicht auf eine Gärung des Tabaks unter dein Einfluss von Mikrolebewesen.
Alle bisherigen wirklichen Ferment:ations- verfa.hren des Tabaks sind bei der Anwesen- heit von Sauerstoff durch das Auftreten mehr oder minder intensiver Osedaiion als 13e- gleiterscheinungen gekennzeichnet. Darum treten bei ihnen allen - neben den Verhiten durch Verderbnis (Schimmel, 11Iiiffigiverderi, Verbrennen) - erhebliche Materialverluste auf, die sich in einer Gewichtsabnahme von bis zu 18',
r0 zeigen.
Das Wesen der vorliegenden Ei-finduii@.;- besteht darin, den Tabah unter völligem Ausschluss jeglichen freien Sauerstoffes zti fermentieren. Dadurch entfallen sowohl die Verluste durch Verderb des Materials, als auch die Gewichtsverluste durch Os-,-dation der Rohstoffe.
In weiterer Ausführung des Verfahrens kann man den Tabak vor der Fernientierun- in bekannter Weise mit geeigneten Bakte rien, die bei Sauerstoffmangel zu wachsen ver mögen. insbesondere mit aus Edeltabaken ge züchteten Ba.lderien impfen oder aiieh mit Hefen. Hierdurch kann das Bukett des Ta baks in eine bewünsehte Riclitunb gebracht werden.
iNlan hat auch schon den Vorschlag ge macht, Tabak mit Reinkulturen von @al@ak- bakterien und auch mit Hefe zu fermen tieren, aber immer in Gegenwart von freiem Sauerstoff.
In diesem Falle kann weben des Wachstum: aerober Mikrolebewesen das Bu kett des Tabaks nicht. in die gewünschte Richtung gebracht werden. im Gegensatz zu der vorliegenden Erfindung. die dieses durch den vollständigen Anssehluss des freien Sauerstoffes erreicht.

Statt eines Hahnes im Deckel kann auch der gasten mit einer oder meh reren Gärröhren im Deckel versehen sein, die infolge des bei der Fermentation im Ka sten herrschenden geringen Überdruckes die überschüssigen Gase aus dem gasten aus treten lassen, während umgekehrt die Luft durch diese Gärröhren in den gasten nicht eintreten kann. Es können fertige Ballen ein gelegt werden.

Die geschlos senen Kästen werden nun= in einen Raum gestellt, der auf eine für das Wachstum der gewünschten Flora geeignete Temperatur ge bracht und konstant gehalten ist. Bereits nach 24 Stunden wird man an den Bewe gungen des p$, die am Ionometer festgestellt werden, das Beginnen der Gärung wahr- nehmen können. Nach etwa sechs Tagen ist im allgemeinen ein pH von Nähe 5 er reicht und damit die Fermentation beendet.
Der gasten wird geöffnet, der Tabak her ausgenommen und etwa für zehn Minuten durch einen Raum mit einer Temperatur von etw=a 62 C geführt, der soviel Feuchtigkeit enthält, dass der Tabak nicht brüchig, sondern griffig herauskommt. Der Tabak wird in üblicher Weise in Ballen verpackt, und, wie üblich, aufbewahrt.
Bei Impfung mit fremder Flora oder bei Zugabe fremder Mikroorganismen, wie etwa geeigneter Weinhefen, wird die Dauer der Fermentation meist etwas vergrössert, weil die Entwicklung eine langsamere ist. Die Verlangsamung wird verursacht durch die Verringerung der Zahl der zur Fermentie- rung im Anfang auf dem Tabak vorhandenen Lebewesen.
Die durch das vorstehend beschriebene Verfahren erzielten Vorteile sind: 1. Wegfall von Materialverlusten (Ver derb, Gewicht), 2. Möglichkeit, die Fermentation zu len ken, B.
