Abstract

SISTEMA DE AMACIAMENTO DE CARNE Método e aparelho para amaciar carne são descritos. Fluido pode ser injetado dentro de uma parte de uma carcaça coincidindo com um corte de carne desejada para amaciamento. O local de injeção pode ser esterilizado antes ou durante injeção do fluido. O fluido pode ser um gás, tal como dióxido de carbono ou nitrogênio, ou pode ser um líquido. Múltiplas injeções podem ser realizadas ligeiramente espaçadas entre si. O aparelho de injeção pode incluir uma pluralidade de injetores ou agulhas possuindo aberturas para passagem de gás através das mesmas. As agulhas podem ser presas a uma base possuindo uma mangueira presa à mesma. Fluido pode ser bombeado através da mangueira, através da base, através das agulhas e para dentro da carcaça. O conjunto de esterilização pode ser provido com o aparelho de injeção para esterilizar o local de injeção antes e/ou durante injeção.
