Abstract
Patente da Invenção: "SUSPENSãO PARA A ADIçãO DE UMAQUANTIDADE CONTROLADA DE INGREDIENTES A UMPRODUTO ALIMENTìCIO". Processo melhorado de adicionaringredientes aditivos para alimentos a um produto alimentício,particularmente um produto para aperitivo frito de gordura reduzida,e uma suspensão de ingrediente contendo uma gorduracomestível escoável, preferivelmente não digerivel, e ingredientesaditivos para alimentos. O processo consiste em suspender osingredientes encapsulados ou em pó na gordura comestívelescoável e aplicar a suspensão em uma quantidade controlada nasuperfície de um produto alimentício. O produto alimentíciopreferido é uma batata em lascas fabricada de gordura reduzida ouisenta de gordura que é um aperitivo frito feito por fritura de umamassa em uma gordura não digerível em um teor de umidade demenos do que 5%. A suspensão de ingrediente é aplicada àsuperfície do aperitivo frito após emergir do fritador. O produtoalimentício tem uma textura crocante melhorada tostada leve, umsabor melhorado e um teor de gordura de desde aproximadamente20% até aproximadamente 38% de gordura não comestível e éfortificado com ingredientes aditivos para alimentos.
