Abstract

produtos alimentícios texturizados contendo partículas insolúveis e métodos de fabricação de tais produtos alimentícios. a presente invenção refere-se a um análogo de carne pode, que incluir uma emulsão de proteína firme, sendo que a emulsão de proteína tem uma proteína e ao menos uma partícula insolúvel. em algumas modalidades, pelo menos uma porção da partícula pode incluir pelo menos um material mineral selecionado do grupo que consiste em silício e cálcio, como um ou mais dentre calcita romboédrica, calcita escalenoédrica, dióxido de silício e óxido de magnésio; ao menos um material orgânico selecionado do grupo que consiste em uma farinha de osso, uma farinha de cartilagem, uma casca de crustáceo moída, uma casca de peixe marinho moída e uma casca de ovo moída; e/ou uma goma vegetal gelificada, um hidrocoloide gelificado, uma goma vegetal polimerizada, um hidrocoloide polimerizado ou uma mistura dos mesmos. o análogo de carne pode ser produzido pela extrusão da emulsão de proteína e resfriamento da emulsão extrudada. o análogo de carne pode ser cortado em pedaços e/ou adicionado a uma outra composição comestível, como um molho ou caldo.
