Abstract
"EMULSãO DO TIPO óLEO-EM-áGUA". A presente invenção refere-se a cremes não derivados do leite que compreendem uma mistura de composições de triglicerídeos, que têm uma grande variedade em composições de ácidos graxos e triglicerídeos contidas na mistura que apresentam uma maior estabilidade em armazenagem e desempenho ao ser batido. As misturas complexas de triglicerídeos são obtidas, de preferência, através de esterificação.
