Abstract

"COMPOSIçãO COMESTìVEL óLEO EM áGUA NA FORMA DE UMA EMULSãO". Emulsão comestível óleo-em-água composta de: 35 - 70% (em peso) de óleo comestível; 0,5 - 10% (em peso) de emulsificante derivado de gema de ovo; 0,3 - 1,5% (em peso) de caseína; 65 - 25% (em peso) de água, onde pelo menos 60% das gotas de óleo têm um tamanho de 1- 5 <109>m. Tal composição de preferência tem um valor de Stevens de 60 - 160, quando medido utilizando-se um analisador de textura Stevens, a 20<198>C, depois de uma estocagem de duas semanas a 20<198>C, utilizando-se uma velocidade de 2 mm/s e uma distância de 20 mm.
