Abstract
"COMPOSIçãO DE AMIDO, USO DE UMA COMPOSIçãO DE AMIDO PROCESSO PARA PREPARAR UM ALIMENTO ESPESSO, ALIMENTO, E, CONFEITO". A invenção se refere a hidrocolóides que são usados como agentes espessores, aglutinantes, geleificantes ou estabilizantes usados na indústria de alimentos. A invenção fornece uma composição de amido, compreendendo uma primeira fração compreendendo amido reticulado e no mínimo uma segunda fração compreendendo amido despolimerizado. A referida composição é adequada por exemplo para servir para substituição de gelatina em alimento de natureza variada, e é de preferência adequada para uso em alimento tal como confeito.
