Abstract

Fruit and pectin juices are treated by adding proteolytic enzymes, partic. papaine, bromeline or related enzymes, pref. with the addition of a fungic protease, and holding the mixt. at a temp. between 0 degree and 60 degrees C., pref. between 40 degrees and 60 degrees C. The proteolytic enzymes are pref. present at between 100 mg. and 1 g., and the fungic protease at less than 50 mg., pref. 10-25 mg., per l. of fruit juice. The juice is separated from the flocculate pref. by centrifuge or decantation. The process is economical and gives juices which are more natural and sweeter than those given by the normal processes. The juices are used for making sweets, jellies, fruit or beet juices and concentrates, and also in various sugar preparations.
