La présente invention concerne d'abord un procédé de torréfaction continua ao son de céréales caractérisé parce qu'on déplace de façon régulièro le son pendant le chauffage, ce qui assurela torréfaction homogène de la masse de son, tout en évitant lé séjour prolongé du son dans la zone de chauffage, et sa carbo- nisation.

'Cet aérotherme refoule une veine d'air chaud qui vient en contact avéc les ailettes 6 des cylindres torréfacteurs 121 122 etc... et assure ainsi le chaufrage de ces cylindres et la torréfaction du son par convention et contact.

L'air ayant cédé ainsi la majeure partie de ses oalories sort à la hauteur du dernier cylindre torréfacteur par une buse 27 suivant la floche f.7; cet air, ainsi débarrassé de la majeure partie de ses caloriesretourne à l'aérotherme, s'y échauffe à nouveau pour revenir suivant f.6 dans la buse 24 : on réalise ainsi un circuit fermé de circulation d'air, ce qui assure une récupération optimum des calories et un rendement optimum.
Les dispositifs suivants assurent l'évacuation des vapeurs et fuites de torréfaction.
Une cheminée 38 est montée dans le cylindre torréfactour supérieur, cette cheminée Evacue les vapeurs qui se dégagent du son au début de son chauffage.

Par le moyen d'un moto-ventilateur pulseur d'air 33, et d'une canalisation débouchant à l'intérieur d'un cône venturi 34, il est créé une dépression dans ces gaines dans le but d'aspi rer, en dépression cassée, les vapeurs et les fumées au fur et à mesure qu'elles se présentent.
L'avantage de ce système réside principalement dans le fait que l'émission des vapeurs et fumées est constamment visible et contrôlable.

En résumée on réalise, conformément à l'invention, non seulement un procédé permettant de torréfier.le son dans les conditions industriellesles plus favooales, mais aussi un appa- reil pour la mise en oeuvre, industrielle et effioace de ce procédé.
