Abstract

Process for obtaining a liquid concentrate based on essential oils and intended for the preparation of hot or cold infusions. According to the invention the essential oils have damar gum added to them in order to increase their density and are then emulsified in a pectin-treated and flavoured aqueous solution containing emulsifiers in a sufficient quantity to obtain the same HLB (hydrolipid balance) as the oils employed. The mixture obtained is then homogenised while a high compression followed by an abrupt decompression is applied in order to reduce the size of the lipid droplets to microparticles. The mixture is then heat-sterilised in order to eliminate any microbial presence in the solution before packaging. The process described is particularly intended for the manufacture of concentrated alimentary beverages.
