Abstract

La presente se refiere a un hidrolizado de proteínas y a un proceso para preparar dicho hidrolizado de proteínas. En especial, la presente se refiere a un hidrolizado de colágeno y a un proceso para preparar dicho hidrolizado de colágeno. Además, se refiere a una aplicación de alimentos, alimentos para mascotas, cosmética, farmacéutica o técnica que comprende el hidrolizado de proteínas de la presente y a otros componentes de alimentos, alimentos para mascotas, cosméticos, farmacéuticos o técnicos. Reivindicación 1: Una proteína hidrolizada que se caracteriza por tener a) un contenido de humedad de 4 a 12%, b) un contenido de proteína de 85% en peso o más, c) un tiempo de hidratación de 7 segundos o inferior, y d) un tiempo de disolución de 250 segundos o inferior. Reivindicación 7: Un proceso para producir un hidrolizado de proteínas caracterizado porque comprende las etapas de: a) incubar una composición que comprende proteína con una peptidasa para obtener una composición que comprende hidrolizado de proteína, y b) opcionalmente, desmineralizar la composición que comprende el hidrolizado de proteínas, y c) ajustar, preferentemente aumentar, el contenido de sustancia seca de la composición que comprende el hidrolizado de proteínas a una sustancia seca de 40 a 65% para obtener una composición concentrada que comprende el hidrolizado de proteínas, y d) secar la composición concentrada que comprende el hidrolizado de proteínas para obtener un hidrolizado de proteínas seco, y e) aglomerar el hidrolizado de proteínas seco, y f) recoger la proteína hidrolizada. Reivindicación 13: Uso del hidrolizado de proteínas de acuerdo con cualquiera de las reivindicaciones 1 a 6 en aplicaciones de alimentos, alimentos para mascotas, productos farmacéuticos, cosméticos o técnicos.
