Abstract

La presente se refiere a un proceso para producir un producto de té que comprende las etapas de: (a) incubar la hoja de té fresco en condiciones anaeróbicas a una temperatura de 4ºC a 60ºC durante un período de 4 a 36 horas; (b) someter a la hoja incubada a una etapa de separación para producir la carne; y (c) fermentar la carne en presencia de 0,001 a 5% de tanasa en peso de la carne.
