Abstract

La presente se refiere a una composición líquida para confituras congeladas, en particular a composiciones no perecederas que es adecuada para preparar confituras congeladas en el momento. La composición líquida para confituras congeladas comprende 0.01 a 2% en peso de proteína de suero en base a la composición total (en peso); 0.01 a 3% en peso de estabilizadores, menos de 4.5% en peso de grasa, menos de 15% en peso de edulcorante, al menos 25% en peso de fruta, y con un pH en el rango de 3.5 a 4.2, preferentemente en el rango de 3.6 a 3.8 y un contenido de sólidos superior a 10% en peso. También se refiere a un método para producir la composición líquida y a un método de preparación de la composición congelada.
