Abstract

La presente está relacionada un método para la preparacion de productos a base de carne que contienen aceite a los que se agrega, como máximo, un aditivo seleccionado del grupo compuesto por agentes emulsionantes, agentes estabilizadores y agentes de engrosamiento, durante la preparacion de productos a base de carne que contienen aceite, estando el método basado en etapas multiples de adicion de aceite, y a los productos a base de carne que contienen aceite, preferentemente productos de tipo emulsionante a base de carne, productos a base de carne, picados o comunmente cortados, paté y embutido fresco (crudo), incluyendo además de los ingredientes básicos comunmente previstos para los productos específicos a base de carne, una cantidad reducida de aditivos seleccionados de agentes emulsionantes, agentes estabilizadores y/o agentes de engrosamiento. Preferentemente, los productos a base de carne de la presente que contienen aceite, contienen un máximo de tan solo un simple aditivo de agentes emulsionantes, agentes estabilizadores y/o agentes de engrosamiento. Más preferentemente, los productos a base de carne de la presente invencion que contienen aceite, no contienen aditivos, Ej. ningun agente emulsionante, ningun agente estabilizador ni ningun agente de engrosamiento. Además, la presente corresponde a un proceso de preparacion de productos a base de carne que contienen aceite.
