Abstract

Un procedimiento para preparar un producto a base de frutas o verduras que comprende: agregar pectina y pectinmetilesterasa a una pasta de frutas overduras que no sea sensible a la pectinmetilesterasa; incubar la pasta con la pectina ypectinmetilest erasa; y opcionalmente inactivar la pectinmetilesterasa.Un producto a base de frutas o verduras así preparado.
