Abstract

1. An enzyme which has been isolated from bacteria and converts sucrose into isomaltulose as the main product and in addition into 1-O-alpha-D-glucopyranosido-D-fructose, fructose and glucose as the most important by-products, but into no detectable quantities of other disaccharides.
