Abstract
Description
1).ラウリン酸の含有量が0.300~2.00ppmであり、ナトリウムの含有量が130~600ppmである容器詰め飲料。
2).ラウリン酸の含有量が0.400~2.00ppmである、1)の容器詰め飲料。
3).ナトリウムの含有量が150~600ppmである、1)又は2)の容器詰め飲料。
4).ラウリン酸の含有量とナトリウムの含有量比がラウリン酸:ナトリウム=1:100~1:2000である、1)~3)のいずれかの容器詰め飲料。
5).ラウリン酸がココナッツウォーターとして配合される、1)~4)のいずれかの容器詰め飲料。
6).糖を配合して得られるBrix値12以下の飲料である、1)~5)のいずれかの容器詰め飲料。
7).酸味料を配合して得られるpH2~6の飲料である、1)~6)のいずれかの容器詰め飲料。
8).飲料の製造方法であって、以下の工程(i)~(iv):
(i)飲料中のラウリン酸の最終濃度が0.300~2.00ppmになるように、ラウリン酸を配合する工程、
(ii)飲料中のナトリウムの最終濃度が130~600ppmになるように、ナトリウム塩を配合する工程、
(iii)飲料(調合液)を殺菌する工程、及び
(iv)飲料(調合液)を容器詰めする工程
を含む、容器詰め飲料の製造方法。
9).飲料中のラウリン酸の最終濃度が0.300~2.00ppmである、8)の容器詰め飲料の製造方法。
10).飲料中のナトリウムの最終濃度が130~600ppmである、8)又は9)の容器詰め飲料の製造方法。
11).ラウリン酸がココナッツウォーターとして配合される、8)~10)のいずれかの容器詰め飲料の製造方法。
本発明の飲料は、ラウリン酸及びナトリウムを含有することを特徴とする。
本発明の飲料におけるナトリウムの濃度は、130~600ppm、好ましくは150~600ppm、より好ましくは200~600ppmである。ナトリウム濃度が低すぎる場合、発汗で喪失する水分及び塩分の補給には不十分である。
本発明では、飲料の種類は特に制限されず、例えば、炭酸飲料、果実・果汁飲料、コーヒー飲料、茶系飲料、茶飲料(緑茶、烏龍茶、紅茶など)、豆乳、野菜飲料、スポーツ飲料、乳性飲料等の清涼飲料のほか、乳飲料や乳酸菌飲料等が挙げられる。中でも、本発明の飲料はスポーツ飲料であることが好ましく、特に正常なヒトの体液浸透圧(約280~290mOsm/kg)を有する飲料(いわゆるアイソトニック飲料)、あるいはヒトの体液より低い浸透圧を有する飲料(いわゆるハイポトニック飲料)が好ましい。
別の観点からは、本発明は、飲料の製造方法である。当該方法は、飲料にラウリン酸及びナトリウムを配合する工程を有する。配合されるナトリウムの飲料中での最終濃度は130~600ppm、好ましくは150~600ppm、より好ましくは200~600ppmである。また、配合されるラウリン酸の飲料中での最終濃度は0.300~2.00ppm、好ましくは0.400~2.00ppm、より好ましくは0.700~2.00ppmである。ナトリウム及びラウリン酸の濃度は、配合工程での添加量の調整等により達成される。ナトリウム及びラウリン酸を配合する形態及び方法は特に限定されず、ナトリウム及びラウリン酸そのもの又はそれらを含む物品を、原料として製造工程の任意のタイミングで添加することができる。
実施例1の飲料組成物に、ラウリン酸、その他の食用油脂を0.7ppmずつ調整し、95℃で30秒殺菌し、500mlのPETボトルに充填することにより実施した。実施例1と同様の評価を行った。
Claims (5)
- ラウリン酸の含有量が0.300~2.00ppmであり、ナトリウムの含有量が130~600ppmである容器詰め飲料。
- ラウリン酸の含有量とナトリウムの含有量比がラウリン酸:ナトリウム=1:100~1:2000である、請求項1の容器詰め飲料。
- ラウリン酸がココナッツウォーターとして配合される、請求項1~2のいずれか一項に記載の容器詰め飲料。
- 糖の含有量がBrix値として12以下である、請求項1~3のいずれか一項に記載の容器詰め飲料。
- 殺菌処理された、請求項1~4のいずれか一項に記載の容器詰め飲料。
