Abstract

熱水に対して良好な分散性を有し、且つざらつきの抑制された溶液を与える水和性の高い大豆たん白素材の提供を課題とする。特にたん白飲料を調製するのに好適に用いることのできる大豆たん白素材の提供を課題とする。 大豆たん白を水系下にプロテアーゼで0.22MTCA可溶率が15-30%となるまで加水分解する工程、大豆たん白にHLB値が6以上13以下の乳化剤を添加する工程、加水分解の後に大豆たん白を乾燥する工程、乾燥の前に大豆たん白を水系下に105~180°Cで15~180秒加熱する工程を含むことで、熱水への分散性及び水和性を有する大豆たん白素材の製造が可能となった。
