II existe différents types d'appareils de cuisson convivial permettant de partager un repas à plusieurs convives, l'appareil étant disposé au centre de la table et permettant à chacun de cuire à son goût des morceaux de viande, de poisson, de légume, de fromage, etc. en fonction du type d'appareil. On connaît des appareils de grillade qui comportent une surface de cuisson plane et horizontale sur laquelle on pose les aliments à plat pour les faire griller. Lors de la cuisson, les sucs de cuisson et les graisses de ces aliments stagnent sur la surface de cuisson, où ils sont brûlés et dégagent des fumées incommodantes. L'appareil décrit dans la publication JP 61 140725 comporte une surface de cuisson plane et horizontale pouvant être légèrement inclinée de quelques degrés et comporte des petits crans aptes à retenir les aliments. On connaît également des appareils de fondue qui comportent un caquelon contenant un liquide chauffé (bouillon, huile) dans lequel on cuit les aliments par immersion dans le liquide, mais sans pouvoir les faire griller. Un autre appareil connu présente une forme de chapeau conique métallique, pourvu à sa base d'un récipient annulaire pour y recevoir du bouillon. Ce chapeau conique constitue une surface de cuisson conique, chauffée par l'intérieur au moyen de brûleurs à alcool ou similaire, et permettant l'écoulement automatique du jus de cuisson et des graisses des aliments. Cette surface de cuisson comporte une pluralité de crochets, formés par découpage de la tôle du chapeau, sur lesquels sont accrochés les morceaux de viande ou de poisson qui grillent au contact de la surface de cuisson. Au cours de la cuisson, la surface de cuisson conique peut être déglacée en déversant une louche de bouillon prévu dans un caquelon séparé, ce bouillon étant collecté dans le récipient annulaire, servant à cuire les légumes, les nouilles, etc. Cet appareil qui combine « grillade » et « fondue chinoise » présente des inconvénients majeurs liés essentiellement à sa dangerosité et à son nettoyage. En effet, les crochets intégrés à la surface de cuisson forment des pointes coupantes et très chaudes, dangereuses à la fois pour les convives qui peuvent s'y brûler en voulant accrocher leur morceau de viande ou de poisson et pour la personne qui nettoie l'appareil qui peut s'y couper.
