L'invention est relative à l'utilisation de bactéries lactiques possédant une activité citrate-lyase et une activité aspartate-aminotransférase, et dépourvues d'activité citrate-perméase, pour la production d' alpha-cétoglutarate, notamment dans le cadre de l'affinage de produits alimentaires fermentés.
