Abstract

It is intended to provide a method of softening an animal protein which comprises impregnating the animal protein with a liquid mixture prepared by mixing, per 100 parts by weight of the animal protein, from 3 to 12 parts by weight of a salt solution, from 1 to 10 parts by weight of an alkali solution and from 0.001 to 0.1 parts by weight of an enzyme powder to thereby impart functions of solubilizing salts and degelling to the animal protein and cause an enzymatic reaction thereby softening the animal protein; foods containing the animal protein softened by this method; and softening agents comprising a salt powder, an alkali powder and an enzyme powder respectively giving the concentrations as specified above when dissolved in an appropriate solvent. More specifically, the enzyme powder comprises one member selected from among proteases and amylases or a mixture thereof. As the protease, papain, actinidin and cucumisin are desirable.
