The invention relates to cooking apparatus and more particularly to cookers for cooking various material by either the continuous or batch process and in which the material being treated is agitated during the cooking process.
The general object of the invention is to provide a cooker in which live steam may be introduced into the cooking chamber and a steam jacket surrounds the cooking chamber, and while the apparatus shown is particularly adaptable to the making of process cheese, it may be used for other cooking purposes. In such an apparatus problems of reinforcing the jacket space, anchoring the direct injection steam pipes, supporting the feed screw or screws and permitting of their ready removal, and securely clamping the top cover are present. Among the several features of the invention is a reinforcement for the lining and jacket comprising a stay bolt connection therebetween which allows freedom of movement between the lining and jacket when the rate of thermal expansion is not the same or when stresses occur in either.
Another feature of the invention is the anchoring of direct steam injection pipes to the lining at an angle to the cooker centerline and also at an angle to horizontal to assist in the movement of the material being treated and the connection of these pipes to the jacket by a flexible mounting.
Another feature of the invention is the mounting of the feed screw on a half sleeve bearing at one end and a bearing unit at the other end disposed outside the cooking area.
Another feature is the structure permitting' removal of the feed screw without disturbing the exteriorly located bearing and packing gland by a detachable coupling which also forms a section of the screw, with leakage around the shaft prevented by means of said packing gland.
Another feature of the invention is the means for clamping a removable cover in pressuretight relation with the lining and so that the cover may be mounted to swing from either side of the apparatus to meet installation conditions, it being noted that the sealing pressure is applied in the areas where the sealing surfaces are located and not on those parts of the cover where distortion might take place.
The invention consists in the above and other features hereinafter 'described and more particularly defined by claim at `the conclusion hereof.

Referring to the drawings, the numeral IIJ designates a frame in which the cooker and its drive mechanism are mounted. The cooker includes an outer jacket II formed of suitable sheet metal, such as stainless steel, with flanged tops I2 extending along its sides and a rounded bottom I3, this shell being connected, as by welding, at its ends to end plates I4 and I5, the end plate I5 having an opening I6 therein and being provided with spaced guides I1 for the mounting of a slidable valve plate I8 provided with a handle I9 and having an outlet opening 2Il therein to aline with opening I6. The lining is formed by a trough-like shell 2I of sheet metal, such as stainless steel, having side flanges 22 welded or otherwise suitably secured to the flanges I2 of the jacket shell and having either a single curved bottom in the case of a single screw, as shown in Figs. 1 to 3, or a double curved bottom, as shown in Fig. 9, in the case of a double feed screw, said lining being connected by welding to the end plates I4 and I5. The members forming parts of the frame I0 are welded or otherwise suitably secured either to the flanged portions of the jacket and lining or to the sides of the jacket. The jacket and lining or liner are reinforced by a plurality of stay bolt connections, one of which is shown in detail in Fig. 8 and comprises a plate 23 welded or otherwise xedly secured to the Outer side of the lining and carrying a U-shaped rod 24 whose transverse portion is slidably mounted in an opening 25 of a bolt 26 whose threaded shank 2l extends through the jacket and is held in tensioned engagement therewith by a washer 28 and nut 29 which parts are then welded together and to the outer surface of the jacket as indicated in Fig. 8. This type of reinforcing spacing means lbetween the jackets allows free movement between the lining and the jacket when the rate of thermal expansion is not the same and/or when stresses occur in either. l
