APPARATUS FOR BROILING.

SPECIFICATION forming part of Letters Patent No. 245,925, dated August 16, 1881.

To all whom it may concern:

Be it known that I, H. M. KINSLEY, of Chicago, in the county of Cook and State of Illinois, have invented certain new and useful ImprovementsinApparatusforBroiling Meats, Fish, 860.; andlhereby declare the following to he afull, clear, and exact description of the invention, such as will enable others skilled in the art to which it pertains to make use of it, reference being bad to the accompanying drawings, which form part of this specification.

My invention relates to an improvement in broiling stoves or furnaces.

Heretofore in broilers the meat has been cooked directly over or before live coals, anthracite or charred. This class of broilers have been found objectionable because of the consumption of j uices, the absorption of gases from the fuel, and the intense heat to which the operator is subjected.

The object of my invention is to provide a broiler of such construction that the meats shall retain their juices, shall be free from all gases, and such that the heat thrown out shall not be intense; also, such that any escaping greases may be saved and not consumed.

My invention consists of a fire-box, A, pro vided with doors, shaking and dumping grates, ash-pan, 850., andproperlylined withfire-bricks. From either side of the fire-box a main flue, B, passes over inclosed compartments 0, thence i by return-flue D,back of said main flue and compartments, to the back of the fire-box, and by means of a pipe to the chimney. The return-flue is provided with dampers and with doors E, for cleaning both the main and return-fines. The top and front of the flue over compartments 0 is protected by a covering of asbestus cement, M, to prevent radiation, While the back of the main flue and upper part of compartments 0 are protected by the return-flue. The compartments 0 are provided with doors F,above the level of which are gridirons G for the meat, which gridirons are provided with tight fronts, rollers, and wooden handles. In tbe bottom of the compartments 0 are placed either pans H, supplied with water through pipe I and drained through pipe J, or some arrangement of inclined planes K, ofsomenon-conducting material,with perfectly smooth faces, to receive the dropping grease from the gridirons above. The water, kept fresh by a new supply, provided as above, (or the non-conducting material,) not absorbing intense heat, the grease does not burn, but may be conducted to tanks through pipes J J.

From the foregoing it will he understood that the operation of my broiler is notdependent upon any fixed dimensions or number of compartments, which may be one, two, three, or four, 850., arranged either on one side or both sides of tire-box.

I do not limit myself to any particular construction of any of the parts as shown in the drawings.

The return-flue may be either over or back of-the main line, and thus protect the top, while the back is protected by asbestus cement.

Having thus described my invention, what I claim as new, and desireto secure by Letters Patent, is-

1. In an apparatus for broiling meats, &c., the combination of the broiling-chamber 0, having a door, F, the top heating-flue, B, the movable gridiron G, and the grease-receptacle arranged atthe bottom of the broiling-chamher, in combination with a furnace, A, as and for the purpose set forth.

2. The combination of the main fine B, having non-conducting covering and front facing, M, and the return-flue I), with the broilingchamber 0 and gridiron G, as herein set forth.
