This invention relates to improvements in knives, and more especially to a novel duplex knife adapted to be used for paring as well as ordinary purposes.

In accordance with my invention, a conventional kitchen knife may be modified to suit my improvements, or the knife may be manufactured in the beginning to embody my improvements.

The primary purpose of the present invention is to provide a combination knife provided at one side of its blade with one edge for ordinary cutting purposes, and provided at its opposite side with an auxiliary cutting edge for paring purposes, the paring edge being preferably offset relatively to the knife blade and cooperating with a novel guard which acts as a gauge element to gauge the thickness of the peel when paring vegetables, fruit or the like.

A still further object is to furnish a duplex knife of this character in which the guard is hingedly mounted to allow it to be swung to one side when it is necessary to sharpen the paring edge; one end of the guard and the blade being provided with a latch for normally holding the guard in a position parallel to the paring edge.

With the foregoing objects outlined and with other objects in view which will appear as the description proceeds, the invention consists in the novel features hereinafter described in detail, illustrated in the accompanying drawing, and more particularly pointed out in the appended claims.

Referring to the drawing in detail, 5 is a handle from which projects a blade 6 having an ordinary longitudinal cutting edge 1 which may be used for usual kitchen purposes.

In accordance with the invention, the opposite edge portion of the blade is provided with a paring edge 8, preferably arranged at an angle to the plane of the blade, and normally protected by a guard 9. The latter is preferably in the form of a bar having end portions projecting toward the blade. The end nearest the handle is preferably of fork-shape, as shown at Iii, so that it may straddle the blade, and it is connected to the latter by a pivot pin H.

The opposite end portion of the bar is also preferably bifurcated, as shown at I2, so that it may straddle the blade, and for the purpose of latching this end of the bar to the blade, the bar may be provided with projecting lugs l3 to snap into cavities in opposite surfaces of the blade. Such latch permits the forward end of the bar tobe released from the blade, so that the bar can be swung back out of guarding position, and then the cutting edge 8 may be readily sharpened.

When the knife is used for ordinary kitchen purposes, the guard 9 being relatively thick in comparison with the blade, and being preferably round in transverse cross section, provides a convenient thumb rest or support to facilitate handiing of the knife. On the other hand, when the knife is employed for paring purposes, the guard will function as a gauge to limit the thickness of the peel which is removed from a vegetable or piece of fruit. The portion of the blade between the cutting edge and the handle is provided with a blunt edge I4 forming a thumb or finger support or rest for use when the knife is employed for paring purposes.

From the foregoing it is believed that the construction, operation and advantages of the invention may be readily understood, and while I have disclosed one form of the invention, it is manifest that changes may be made in the details disclosed without departing from the spirit of the invention, as expressed in the claims.

What I claim and desire to secure by Letters Patent is:

l. A knife comprising a handle, a blade projecting from the handle and provided at one side with a cutting edge and at its opposite side with a paring edge portion, a guard having one of its ends pivotally connected to the blade at the inner end portion of the paring edge, and latching means formed by the opposite end portion of the guard and the blade for detachably latching the last mentioned end of the guard to the blade, each end of the guard being of fork shape and straddling the blade.

2. A knife comprising a handle, a blade projecting from the handle and provided at one side with a cutting edge and at its opposite side with a paring edge portion, a guard having one of its ends pivotally connected to the blade at the inner end portion of the paring edge, and means for detachably latching the other end of the guard to the blade at the outer end portion of the paring edge, each end of the guard being of fork shape and straddling the blade, the paring edge portion of the blade being arranged at an angle to the plane of the blade, said guard being arranged substantially in alignment with said cutting edge.

3. A knife of the character described, comprising a handle, a blade projecting from the handle and provided with cutting edges at opposite sides thereof, one of said cutting edges being positioned at an angle to the plane of the blade, a guard for the last mentioned edge formed of a substantially cylindrical bar having fork-shaped ends straddling one edge portion of the blade, means pivotally connecting one of the fork-shaped ends of the guard to the blade, and latching means formed by the opposite end portion of the guard and the blade for detachably latching the last mentioned end of the guard to the blade, said guard being arranged substantially in alignment 5
