Суть способу полягає в тому, що екстракцію свіжих або сухих яблучних вичавків проводять соляною кислотою при рН2,3 з подальшим концентруванням у вакуум-апараті при температурі 40 УС до вмісту 15-18965 сухих речовин. Як прототип винаходу був прийнятий спосіб виробництва пектинового концентрату з яблучних вичавків (Л.В.Донченко. Технология пектина и пектинопродуктов.-Москва: Дели-2000 - с.116-117). Як вихідна сировини використовувались сухі і свіжі яблучні вичавки. Підготовка вичавків полягала в їх подрібненні до 1,5-2,О0мм і 720 промиванні водою температурою 20-250С протягом 20-3Охв. Гідроліз-екстрагування пектинових речовин проводили при температурі 80-900С, рн2,8-3,2, співвідношенні витрат мас твердої і рідкої фаз 1:(2,5-4,0), тривалість процесу 1,0-1,5год. Потім суміш розділяють. пектиновий екстракт охолоджують, освітлюють, фільтрують і концентрують до вмісту пектину 2,5-3,095 з послідуючим асептичним зберіганням або Консервуванням із внесенням сорбінової кислоти.The method of producing pectin concentrate from apple pomace was adopted as a prototype of the invention (L.V.
