The invention relates to food industry. A method for the production of dry instant milk-chicory product involves preparation of aqueous chicory extract, condensation thereof, drying and mixingof dry extract with dried milk and sweetener. Dry extract of stevia leaves is used as a sweetener. Extraction of stevia leaves is carried out in the same aqueous solution as extraction of chicory root. Stevia leaves and chicory root are added to aqueous solution in ratio of 1:12-25 and ratio of solid and liquid as 1:5-7, and after drying of chicory extract with stevia leaves it is mixed with dried milk in ratio of 1:3-4.
