Abstract

Винахід належить до способу одержання напою дріжджового бродіння, який включає стадію зброджування сусла біологічно активними дріжджами для одержання збродженої рідини, яка містить дріжджі, спирт, поліфеноли і протеїн; необов'язкове видалення дріжджів із збродженої рідини; змішування збродженої рідини з частинками полівінілполіпіролідону (PVPP) для зв'язування принаймні фракції поліфенолів і/або протеїнів, які містяться у збродженій рідині, із згаданими частинками PVPP, при цьому принаймні 80 мас. % згаданих частинок PVPP мають діаметр 5-300 мкм; видалення зависі, яка містить частинки PVPP, із збродженої рідини; фільтрування зависі на фільтрі, який має розмір пор 0,1-80 мкм, для одержання багатого на PVPP концентрату і бідного на PVPP фільтрату; регенерування частинки PVPP, які містяться в багатому на PVPP концентраті, шляхом десорбції поліфенолів і/або протеїну із згаданих частинок PVPP і видаленням десорбованих з частинок PVPP поліфенолів і/або протеїну; з подальшим довільним додатковим рафінуванням регенерованих частинок PVPP, які подають регенеровані частинки PVPP на етап с.
