Пастеризуют смесь при 72-7чС в течение с, охлаждают до 32-3 с, добавл ют закваску чистых культур, содержащую в своем составе штаммы микроорганизмов с низкой фосфолипазной и низкой липазной активност ми, дающие зоны гидролиза диаметром мм. Свертывание осуществл ют сычужным ферментом , нарезают сгусток и обрабатывают сырное зерно, удал ют сыворотку, формуют пласт головки и прессуют, Полученные головки сыра сол т в солильных бассейнах и провод т созревание в течение 60-75 дней. Применение в составе заквасок штаммов молочнокислых культур с низкой фосфолипазной и низкой липазной активност ми необходимо дл обеспечени минимальных изменений лйпидных компонентов сыра в процессе его созревани . В частности низка фосфолипазна активность молочнокислых бактерий предотвращает разрушение нативной мембраны (пленочного вещества), окружающей ацилглицерины жиров. Тем самым сохран ютс вкусовые свойства, характерные дл молочного жира. Низка липазна активность предотвращает гидролиз ацилглицеринов жиров , т.е. предотвращает по влению неспецифических дл натуральных сыров продуктов липолиза. Композици жиров немолочного происхождени подбирают таким образом, чтобы они по основным физико-химическим свойствам (табл. и, жирнокислотному составу (табл. 2), липидному составу (табл. 3) и содержанию летучих жирных кислот (табл.
