В таблице приведены сравнительные показатели рабочих и контрольных способов измерени компонентов молока.The invention relates to dairy production, in particular, methods for determining the amount of microorganisms in solutions, determining the percentage of fat and protein in milk and dairy products, and. can be used in the production of whole milk, cream, whey, etc. The known method of determining the content of microparticles in dairy products by irradiating the sample of the monitored product with electromagnetic current and fixing the scattered flux P However, the known method has insufficient accuracy. The purpose of the invention is to improve accuracy. This goal is achieved by the fact that according to the method of determining the content of microparticles in dairy products by irradiating the sample of the monitored product with electromagnetic flow and fixing the scattered flux, the scattering indicatrices are determined for each of the components of the milk product at angles ranging from 0 to optimal The total angles of scattering of the electromagnetic flux for each of the components, and the content of the latter in dairy products is determined by the magnitude of the scattered electromagnit flux measured by The optimum carbon is dispersed for each of the components. The method is carried out as follows. Samples of the controlled product are subjected to electromagnetic radiation and fixation of the scattered flow. In this case, the indicatrices for the crank component are in the range from 0 to and the optimum scattering electrodes of the ground flow are determined for each component. dairy products are determined by the amount of scattered electromagnetic flux measured at the optimum scattering angle for each of the components. The removal of indicatrix scattering is carried out by irradiating each component separately with an electromagnetic flux and fixing the scattered energy at angles in the sector from O to ZbO. After 2.5-10 °, the intensity of the dissipation of electromagnetic energy is measured, which is sensed by the photoreceiver and converted into the magnitude of current (J) or voltage (s). The half-magnitude of the current or voltage, corresponding to a certain amount of the scattered electric energy, is deposited on the radius (R) of the circle in the ratio of the selected scale. After the measurement of the intensity of the scattered electromagnetic energy in the range from O to ZbO, all points on the radii are removed and a closed area (Sin) and the dicatrix of the component under study are obtained. Then, the optimal angles of scattering of electromagnetic energy for the component under study are calculated taking into account the indicatrix obtained using the derived formula — the flow of electromagnetic energy passing through the cell, h is the concentration of monitored components (microparticles); - coefficients% scattering of monitored components; , g - density of components being monitored; - the radii of the particles of the controlled components; , nip area indicat rice controlled components in the sector of the angle; - full areas of indicatrix of controlled components. The determination of the number of microorganisms in solutions according to the proposed method is carried out as follows. Example. Detection: Indicators of rice scattering microorganisms (micrococci). To do this, take a physiological solution with a low concentration of microorganisms (iO bacteria per 1 ml of solution), a test tube with a prepared sample is placed in a measuring device, irradiated with electromagnetic flux, and the measurement of the energy dissipation at angles in the sector O-3BO. The indicatrix scatter for microorganisms (micrococci) is shown in FIG. 1. The optimum angle of scattering of electromagnetic energy is determined by the selected / formula (1). The optimal angle angle for these microorganisms is 3-volts. In the established pithal solid angle, scattered electromagnetic energy (photo-reception) is recorded, the intensity of which is proportional to the number of controlled microorganisms. The number of microorganisms in the controlled sample is determined by a calibration graph or a scale of a previously calibrated instrument. The sensitivity of the proposed method: for concentrations of microorganisms up to 10 units. in 1 ml - 10 units, in 1 ml, for concentrations up to. in 1 ml - 10 units. per ml. The determination of the percentage of the two components in the solutions (fat and protein) according to the proposed method is as follows. EXAMPLE 2: The indicatrix for fat particles is determined. To do this, take homogenized cream and dilute it many times with distilled WATER. The sample thus prepared is poured into a circular cuvette, which is placed in the cuvette unit of the device, and the value of the dissipated electromagnetic energy is measured at the scattering angles of the sector 0-360 °. The indicatrix scattering for the fat particles is shown in FIG. 2, and white in FIG. 3. The choice of optimal solid angles of perception of dissipated electromagnetic energy is made according to the formula (1). The optimal perception angle of diffused electromagnetic energy for simultaneous measurement of the content of fat and protein is 5-60 °. In the optimal angles, the intensity of the scattered electromagnetic energy (photodetectors) is recorded, followed by processing them with respect to the monitored components (fat and protein). Processing the measured physical parameters (output signals of the photodetectors proportional to the intensity of the scattered electromagnetic energy) protein) can be carried out analytically or with the help of automatic computing devices. The table shows the comparative indicators of working and control methods for measuring the components of milk.
