Description
Изобретение относитс к переработке м сожирового сырь в м сной промышленности , а именно к способу обезжиривани шквары в роторе осэдительной центрифуги периодического действи .The invention relates to the processing of fatty raw materials in the meat industry, in particular to a method for degreasing squam in a rotor of a batch centrifuge.
The aim of the invention is to increase the yield of fat.
The method of degreasing squam in a rotor of a centrifuge of periodic action involves loading squash into the rotor, separating it from the centrifugal force of fat from the squash while simultaneously withdrawing it and unloading squash. Moreover, 3-4 minutes after the start of fat separation, water with a temperature of 60-100 ° C is fed into the rotor to displace fat from the surface of the squash. The amount of water supplied is -3-20% by weight of squash.
The method is carried out as follows.
01A clear squash is loaded into the rotor. The centrifuge is turned on for automatic operation and the rotation of the rotor is increased to 1500 rpm. Fat. as a lighter fraction, it is squeezed out of the sediment and is located closer to the axis of rotation. Through the perforated side of the rotor, it is withdrawn, enters the casing and flows into the receiver. 3-4 minutes after the beginning of the separation of fat, hot water is fed into the rotor through the nozzle evenly along the entire height of the sediment. Formed with the emulsion, as well as fat, is drained through the perforated bead surface and into the casing. If necessary, it can be collected in a separate container. Water supply duration 10Och 01

30 с. 30 s. Then the water supply stops and the fugovka continues for 0.5-1.0 minutes. Then the rotor is stopped, and the emulsion remaining on the surface is drained into a rotary collector. After that, the sediment is discharged from the rotor.
All parameters of the proposed method are determined experimentally.
When carrying out tests on the mill method of testing the following. With a duration of degreasing the squam up to three minutes before feeding the hot water into the rotor, the residual fat content in the sediment increases, which is undesirable as the yield of fat decreases. When degreasing the squam for more than four minutes before feeding the hot water into the rotor, the residual fat content in the broth remains almost unchanged, which is also undesirable, since electric power is expended on the drive of the centrifuge and the cycle is extended.
1.The research results are presented in table.1.
При увеличении (более 20%) количества подаваемой в ротор гор чей воды выход жира практически не измен етс .In addition, with a decrease (less than 2% by weight of sediment) of the amount of hot water supplied to the rotor, the yield of fat decreases. With an increase (over 20%) in the amount of hot water fed into the rotor, the fat yield remains almost unchanged.
2.The results are presented in table 2.
The temperature of the water supplied to the rotor affects the fat yield, optimally 60-100 ° C. It has been found that at 50 ° C the residual fat content in the sediment increases dramatically. This is due to the fact that under the action of vortex air flows, the water is still cooled by approximately 5–15 ° C, which leads to crystallization of the fat, which is retained in the rotor when the emulsion is filtered. With an increase in temperature of more than 100 ° C, water passes into steam, which does not contribute to an increase in fat yield. Additionally, the resulting fat is used to make soap. The use of the proposed method in comparison with the known provides an increase in fat yield by 5%, improving the quality of feed
