Abstract

The multi-purpose combined food-processing appliance is considered a gastronomy or household appliance for food processing by heat. The appliance provides the possibility of multi-purpose food processing. The main feature of this concept of new appliance is the use of a rotating drum (1) inside the oven. On the internal circumference of the rotating drum (1) there are bases or blades (4) attached or standing out from the drum provided for conveying liquids. Baskets or baking tins (6) can be statically located to the centre of the drum (1). Even special food containers, which can be separated into chambers and after their application rotated together can be provided inside the drum (1). The other construction concept is to use a static drum with a horizontally positioned axis, while inside of it it features moving adapters, used for the distribution of rotating consoles. The first option of the second concept includes rotating consoles featuring blades (9), provided for watering the food. The other option of the second concept includes one or several installed or attached net or perforated food chambers (10).

Description

Predmet izuma je gospodinjski ali gostinski aparat, ki omogoča več možnih načinov toplotne obdelave hrane. Tehnično področje, katerega rešuje izum, je področje prehrane za ljudi. Tehnični problem, ki ga rešuje izum, je takšna konstrukcija aparata, ki omogoča večnamensko pripravo hrane in sicer cvrtje, peko in žar ob uporabi minimalne količine jedilnega olja ali brez in tudi kuhanje v sopari. Dosedanji aparati nudijo naslednje možnosti toplotne obdelave hrane: friteze nudijo možnost cvrtja s potapljanjem hrane v vrelo olje, razne pečice služijo za pečenje, dušenje ali žar in parni kuhalniki nudijo možnost kuhanja v pari. Konstrukcija novega aparata omogoča in združuje vse v prejšnjem stavku omenjene možnosti toplotne obdelave hrane, enakocasno pa rešuje nekatere specifične probleme, kateri se pojavljajo pri toplotni obdelavi hrane pri dosedanjih aparatih. The technical field of the invention is the field of human nutrition. A technical problem solved by the invention is the construction of the apparatus, which allows the multifunctional preparation of food, namely frying, baking and grilling with or without the minimum amount of edible oil, and also cooking in the steam. Previous appliances offer the following food heat treatment options: deep fryers offer the ability to fry by dipping food into boiling oil, various ovens serve for roasting, stewing or grilling, and steam cookers offer steam cooking. The construction of the new appliance enables and integrates all the above mentioned possibilities of heat treatment of food, while at the same time it solves some specific problems that arise in the heat treatment of food in the existing appliances. The problem with baking in the oven is that the food, such as meat, must be rotated or oiled at intervals. The problem of frying in the fryers is the excessive consumption of edible oil and the associated ecological problem of waste oils, which is not negligible in catering establishments. Due to the large amount of oil, there is also the problem of the high cost of food preparation and, consequently, the problem of repeated use of the same oil, and such edible oil has proven carcinogenic properties.

Zadnji problem se pojavlja tudi pri domači rabi. Pri cvrtju v fritezah prihaja tudi do problema prevelikega vpijanja olja v hrano, saj se hrana s toplotno obdelavo velikokrat zmehča in postane bolj porozna. Takšna hrana je zdravju bolj škodljiva in bolj kalorična. Problem kuhalnikov za kuhanje v pari je, daje njihova uporaba preveč omejena le na eno funkcijo, zato kljub temu, da je takšen način priprave hrane med najbolj zdravimi, niso dosegli masovne uporabe v gospodinjstvih. Zato se ljudje še vedno v glavnem poslužujejo kuhanja v posodah z dodatkom vode, kar povzroča izpiranje vitaminov in mineralov, nenakomemo kuhanje ali razkuhavanje ali tudi prežiganje hrane. Oblike teh statičnih nastavkov omogočajo različne stopnje odtekanja jedilnega olja oziroma enakomernost pronicanja pare. Drugo funkcijo vrtečega se bobna označuje možnost namestitve drugega tipa mrežastih ali luknjastih, po potrebi v enega ali več na prekate 7 razdeljivih nastavkov za hrano, kateri po namestitvi rotirajo hkrati in v smeri z bobnom. Takšno cvrtje hrane omogoča, da se hrana vsakokrat v spodnjem položaju namoči v olje 5, katero oblije hrano le od zunaj in tako nima časa za vpijanje, saj se do zgornjega položaja že odteče. Eden ali več sestavljivih prekatov 7 omogoča pripravo ene ali več jedi hkrati po istem postopku hkrati. Predalčna konstrukcija tega, z bobnom rotirajočega prealčnega nastavka omogoča fiksiranje hrane v statično pozicijo glede na prekat in s tem onemogoča premetavanje, lomljenje oziroma poškodovanje hrane med vrtenjem. Rotacijo bobna je možno tudi zaustaviti z izklopom pogona. V tem stanju je možno kuhanje hrane v sopari, pri čemer voda iz dna bobna izpareva navzgor. Po uporabi aparata je možno boben vzeti iz aparata in ga v celoti očistiti. V preteklosti so že uporabljali vrteči se boben za toplotno obdelavo brane, vendar boben ni imel iste namembnosti kot novi aparat, saj je hrano le premetaval po dnu bobna. The first novelty is the possibility of a multifunctional use of the new appliance, since it can be baked, cooked, stewed and steamed. Another novelty is that the new machine works by periodically pouring food placed on statically mounted baking trays with the blades placed on the drum. A third novelty is that the new apparatus operates by soaking the oil placed at the bottom of the drum at each rotation of the drum with the blade placed in the partitions of the mesh nozzle rotating with the drum. The second and third novelties, by function and effect, are a worthwhile alternative to the use of a classic fryer or a classic oven, as it allows food to be continuously immersed in oil while always in contact with oil due to the spatula function.
