Abstract

To stabilise icecream, there are added to the same during production, microcrystalline cellulose and at least one carboxymethylcellulose and/or galactomannans. The weight ratio of microcrystalline cellulose to carboxymethylcellulose in the absence of galactomannans is no greater than 3:1. An icecream stabilised in this manner - compared with icecream stabilised by conventional methods - has improved stand-up and melt-down properties, especially at normal temperatures of consumption.
