1. Способ получения концентрата из овощного сырья, включающий варку измельченных овощей в сахарсодержащей среде, отделение отваренных овощей от сиропа-сырца, отличающийся тем, что в качестве сахарсодержащей среды для варки овощей используют 45 - 55 % сахарсодержащий или медсодержащий сироп, перед варкой осуществляют предварительную выдержку нарезанных овощей в сиропе в присутствии антиоксиданта в течение 40 - 60 мин, а варку ведут в два этапа, на первом этапе овощи варят в сахарсодержащем сиропе под вакуумом при 60 - 80oC в течение 1,5 - 2,0 ч с последующим охлаждением до 45 - 65oC, а на втором этапе - при 60 - 80oC в течение 1,0 - 1,5 ч, причем после отделения овощей от сиропа-сырца его сгущают до концентрации по сухим веществам 70 - 75% при повышенной температуре с последующим резким охлаждением полученного концентрата на 30 - 40oC.1.
