По этому способу кормление сельскохозяйственной птицы для получения мяса и яиц с повышенным содержанием йода и селена, осуществляют введением в комбикорм йода и селена. При этом селен используют в органической форме в дозе 0,53 г/т комбикорма, а йод вводят в дозе 0,95 г/т комбикорма в виде органического йода в расчете на активно действующее вещество, RU №2547469 C1, A23K 1/16, 03.12.2013. Недостатком известного технического решения является недостаточное увеличение содержание йода в яйце (2,7 раза в конце опыта) в сравнении с контрольным, достаточно высокий процент разрушения (потери йода до 22% при тепловой обработке яйца), не указана форма химической связи йода, что является определяющим фактором на качественных характеристиках не только яйца, но и на показателях всей продукции птицеводства.3. Технической задачей предлагаемого изобретения является разработка способа производства пищевых яиц, обогащенных йодом, позволяющего получить продукт с заданным количеством ковалентно связанного йода и обеспечивающего минимальные потери этого микроэлемента при тепловой обработке яиц. Решение данной задачи обеспечивается тем, что способ производства пищевых яиц, обогащенных ковалентно связанным йодом, предусматривает ежедневное введение в комбикорм или в растворенном виде с водой для питья кур-несушек на протяжении всего их продуктивного периода йодорганическое соединение, в котором йод ковалентно связан с углеродом в виде йодированных сывороточных белков коровьего молока, обработанных путем ферментативного йодирования аминокислотных остатков и очищенного от неорганического йода с помощью ультрафильтрации в количестве от 70 до 100 г на 1 тонну комбикорма. Йод в сывороточных белках связан с двумя аминокислотами - тирозином и гистидином (98% и 2% от всего связанного йода соответственно) - в форме монойодтирозинов (МИТ) и дийодтирозинов (ДИТ), которые являются полными аналогами природных органических соединений йода. Изменение концентрации йодированных молочных белков в рационе кур-несушек от 70 до 100 г/т комбикорма (от 0,5 до 0,7 г/тонну йода) позволяет получать яйца, содержащие йод в количестве от 40 до 70 мкг/шт. Iodine in serum proteins is associated with two amino acids - tyrosine and histidine (98% and 2% of all bound iodine, respectively) - in the form of monoiodotyrosines (MIT) and diiodotyrosines (DIT), which are complete analogues of natural organic compounds of iodine. Changing the concentration of iodinated milk proteins in the diet of laying hens from 70 to 100 g / t of feed (from 0.5 to 0.7 g / ton of iodine) allows you to get eggs containing iodine in an amount of from 40 to 70 μg / pc. In this case, iodine in the egg is represented mainly in the form of mono- and diiodotyrosines, i.e. in covalently bound form, which ensures its almost complete safety after heat treatment of eggs (losses are not more than 5%).

Материалом для исследований служили две группы кур-несушек кросса ЛОМАНН ЛСЛ-КЛАССИК (Lohman-lsl-classic), в возрасте 240 дней, содержащихся в клеточных батареях. Длительность опыта составила 8 недель. В обеих группах птица получала комбикорм с одинаковым составом и питательностью, за исключением содержания йода. Контрольная группа птицы на протяжении всего опыта получала полнорационный комбикорм (ПК), применяемый в хозяйстве, с добавлением йода в виде йодата кальция. Опытной группе к комбикорму йод добавлялся в виде йодированных молочных белков в дозе 70 г/т корма в течение 4 недель (первый период - с 1 по 4 недели). С 5 недели количество йодированных белков было увеличено до 100 г/т корма (второй период - с 5 по 8 недели). Полученные данные показывают, что уже в первый период опыта содержание йода в белке, желтке и в целом в яйце значительно отличается от контрольного, превышая его более чем 3-5 раза (а в Прототипе 2,7 максимум). Во втором периоде эксперимента среднее содержание йода в яйце больше контрольного в 4,9 раза. Наблюдается прямая зависимость содержания йода в яйце от его концентрации в корме с добавлением большего количества связанного йода в форме МИТ и ДИТ. При внесении йодированных молочных белков в корм в количестве 70 г/т в яйце обнаруживается в среднем 50 мкг йода, при увеличении концентрации в корме до 100 г/т йодированных молочных белков содержание йода в яйце возрастает до 74 мкг в одном яйце в среднем. Таким образом, проведенные исследования показывают, что использование в рационе кур-несушек йодированных молочных белков, либо их гидролизатов обеспечивает получение обогащенных йодом яиц с заданным количеством микроэлемента в ковалентно связанной форме. Йод в йодированных яйцах сохраняется и после тепловой обработки.
