Изобретение относится к пищевой промышленности, а именно к получению ягод земляники садовой органическим способом с увеличенным сроком хранения.The invention relates to the food industry, namely the production of wild strawberries in an organic garden with an increased shelf life.
Земляника садовая относится к наиболее значимым ягодным культурам. В настоящее время она культивируется практически во всем мире - странах Европы, Азии, Австралии, Америки, Африки. Широкое распространение земляники садовой связано с рядом ее бесспорных преимуществ в сравнении с другими ягодными культурами. Ценность земляники обусловливается ее скороплодностью, высокими вкусовыми качествами, привлекательным видом, а также богатым биохимическим составом, питательностью и лечебными свойствами. Ягоды земляники садовой являются важнейшими источниками биологически активных веществ, однако большинство сортов этой культуры отличается высоким содержанием свободной и слабосвязанной воды, неустойчиво к инфекционным заболеваниям и непригодно к длительному хранению в свежем виде [2, 3, 18].Garden strawberry is one of the most significant berry crops. The berries of strawberry are the most important sources of biologically active substances, however, most varieties of this crop are characterized by a high content of free and loosely bound water, are unstable to infectious diseases, and unsuitable for long-term storage fresh [2, 3, 18].
В настоящее время возрастает интерес к применению технологий экологического земледелия. Спрос потребителей на биологически безопасные продукты в развитых странах неуклонно растет. При производстве биологически полноценных и безопасных продуктов не допускается применение химических пестицидов, синтетических регуляторов роста, использование организмов, полученных методом генетической инженерии, поэтому все больший интерес приобретают биологические средства защиты растений. Правительством Российской Федерации отмечено, что создание и применение биологических средств защиты растений отнесено к приоритетным направлениям развития науки [9].Currently, there is an increasing interest in the application of ecological farming technologies. Биологические препараты, действующим началом которых являются микроорганизмы или продукты их жизнедеятельности, прочно входят в практику защиты растений. Применение биопрепаратов, как и химических средств защиты растений, строго регламентировано в отношении используемых объектов и сельскохозяйственных культур, норм расхода препарата, сроков обработок и других параметров. Современный ассортимент биопрепаратов, к числу которых относятся Планриз, Агат-25К, Псевдобактерин, Фитоспорин и др., позволяет осуществлять защиту сельскохозяйственных культур от наиболее опасных заболеваний [9].Biological preparations, the active principle of which are microorganisms or products of their vital activity, are firmly included in the practice of plant protection. Известен способ снижения поражаемости серой гнилью ягод земляники, заключающийся в однократной обработке растений, путем опрыскивания и полива, с нормой расхода 100 мл на 1 куст через 10 дней после посадки растений микробным препаратом, представляющим собой суспензию равного сочетания штаммов бактерий Bacillus subtilis ТНП-3 и Bacillus subtilis ТНП-5 в концентрации 1⋅109 КОЕ/мл, суспензированных в 1%-ном растворе глюкозы [15]. Имеются результаты многолетних исследований влияния обработок по вегетации препаратами Фитоспорин-М, Планриз, Алирин-Б, Эупарен на поражаемость ягод серой гнилью и на длительность хранения ягод земляники садовой, полученные в Северо-Кавказском НИИ садоводства и виноградарства, под руководством д.с-х.н. Причко Т.Г. и к.б.н. Подгорной М.Е.: при обработке биопрепаратом Алирин-Б процент пораженных ягод составил 9,81%, пораженность ягод при 3- и 4-кратной обработке Фитоспорином-М, при норме расхода препарата 1 л/га, снизилась в 3 раза по сравнению с необработанным вариантом (с 16,7% до 5,3%); биологическая эффективность в борьбе с серой гнилью при трехкратной обработке Фитоспорином-М дозой 1,5 л/га составила 63,0%, биологическая эффективность биопрепарата Планриз была в 2,3 раза ниже и составила всего 26,8%, а химического фунгицида Эупарен почти в 2 раза ниже и составила 33,8%; биологическая эффективность Алирина-Б при хранении через пять суток составила 0%, а при 10-дневном хранении ягод наибольший выход здоровых непораженных ягод был при трех- и четырехкратной обработке земляники по вегетации Фитоспорином-М в дозе 1 л/га; наибольшая биологическая эффективность при 3- и 4-кратной обработке Фитоспорином-М (1 л/га) составила 68,3-69,5%, что практически в 30 раз выше, чем при обработке Планризом. Одним из актуальных направлений исследований, направленных на сохранение свежести и продление срока годности ягод, в частности земляники, является создание так называемых «пищевых» полимерных покрытий на их поверхности. Покрытие ягод пленкой из хитозана снижает интенсивность их дыхания, изменяет концентрации эндогенных газов - этилена, углекислого газа и кислорода, подавляет рост широкого спектра грибов [25, 26, 30]. В зарубежной научной литературе имеются сведения об эффективности использования покрытий из хитозана для продления сроков хранения томатов, перца, огурцов, манго, бананов [22, 24, 28, 30]. Отдельными авторами также изучалась возможность создания полимерного покрытия на основе хитозана для увеличения срока годности продуктов питания, в частности земляники [17]. Для этого ими был использован порошок хитозана производства ЗАО «Биопрогресс» со средневязкостной молекулярной массой, который растворяли в аскорбиновой, молочной, янтарной и лимонной кислотах. To do this, they used chitosan powder manufactured by Bioprogress CJSC with a medium viscosity molecular weight, which was dissolved in ascorbic, lactic, succinic and citric acids. The best result was obtained by treatment with a solution of chitosan in lactic acid [17]. Foreign authors have studied the possibility of creating an “edible coating composition” on strawberries by dissolving 1% or 1.5% of high molecular weight chitosan in 0.5% acetic acid [27]. Other experimental options additionally contained calcium gluconate in a solution of 0.5% or 0.75% [23, 27, 31].
