В качестве рыбного сырья использовали фарш, полученный из мяса осетровых рыб. Осетровых рыб брали выращенных в условиях аквакультуры. В качестве дополнительных компонентов использовали: куриный фарш, шпик, сухой икорный золь. Икорный золь получали при прижизненном получении икры осетровых рыб. Икорный золь очищали от примесей, гомогенизировали и сушили любыми известными способами. Кроме того, использовали молоко сухое, соль, сахар, перец черный молотый, мускатный орех, каррагинан и воду/лед. Измельчение и смешивание компонентов осуществляли в куттере при последовательной закладкой компонентов. Куттеруют 10-12 мин, затем фаршевую массу набивали в коллагеновую оболочку и направляли на осадку продолжительностью до 6 ч. Далее вели термообработку в две стадии, с предварительным прогревом в течение 15-20 мин при температуре 60-63°С, влажности 55-60% и подсушкой в течение 30-50 мин, при той же температуре и влажности 20-25%, затем на первой стадии термообработку (варку) устанавливали при температуре 65-68°С, влажность 95-98 в течение 50-60 мин, а на второй - при температуре 75-78°С, влажности 95-98% и при достижении температуры в центре батона 72°С, начинали процесс охлаждения вначале душированием водой температурой 8-12°С, до снижения температуры в центре батона 45-50°С, а далее холодным воздухом при температуре 2-5°С до температуры в центре батона не выше +15°С, с последующим упаковыванием, маркировкой и хранением.The method was carried out as follows. Затем фаршевую массу набивали в коллагеновую или целлюлозную оболочку и направляли на осадку продолжительностью до 6 ч.
