Abstract
Description
The invention relates to the oil industry and can be used for adsorption refining of vegetable oils.
А.Г. - Т.2. - 1973. - 351 с.)A known method of adsorption refining (bleaching) of vegetable oils, which consists in heating the oil to a temperature of 90-120 ° C with a residual pressure of 40-50 mm RT. column, mixing oil with an adsorbent (bleached earth) and exposure for 20-60 minutes and separating the adsorbent from refined (bleached) oil. (Guidance on the technology for the production and processing of vegetable oils and fats. Under the general editorship of A.G. Sergeev. - L .: Vniizh. - T.2. - 1973. - 351 p.)
The disadvantage of this method is that the bleached oil has low organoleptic characteristics due to the low resistance to oxidation, which makes it impossible to use it in food without subsequent deodorization.
In addition, when refining oil in this way, fatty acids are degraded with the formation of low molecular weight products that give refined (bleached) oil a characteristic unpleasant “earthy” taste and smell. The resulting oil is not suitable for use in the food industry without deodorization, in which the odorizing substances are removed and the taste is depersonalized.
The duration of adsorption refining by a known method is limited to a time of 30-40 minutes. With a longer duration of the process, oxidative processes are significantly intensified, an increase in the mass fraction of isomerized fatty acids in the composition of triacylglycerols occurs. With a high content of undesirable impurities in the oil in order to maximize the removal of undesirable impurities, the intensification of the process will not consist in increasing the duration of the process, but in increasing the amount of sorbent, which will inevitably lead to a deterioration in the economic performance of the process both by increasing the specific consumption of the adsorbent and by increasing losses oils with spent adsorbent.
The objective of the invention is the creation of an effective method of adsorption refining of vegetable oils, which allows to obtain a finished product with high organoleptic and physico-chemical characteristics.
The technical result in the implementation of the proposed method is to increase the resistance of bleached oil to oxidation, improve the organoleptic and physico-chemical characteristics of refined (bleached) oil, increase the degree of transparency of the oil.
The problem is solved in that in the method of adsorption refining of vegetable oils, comprising mixing the adsorbent with vegetable oil, exposing the mixture of adsorbent with vegetable oil and separating the adsorbent from vegetable oil, mixing the adsorbent with vegetable oil and exposing the mixture for 1-5 hours at a temperature of 15 -30 ° C, then lower the temperature of the mixture to 5-10 ° C and carry out exposure for 10-15 hours.
As we have shown experimentally, when carrying out adsorption refining by the claimed method at low temperatures (15-30 ° C), the mass transfer process of sorption of impurities that occurs in the diffusion region proceeds with less intensity, therefore, the process takes longer (up to 5 hours). However, when carrying out the process at the claimed temperatures, undesirable processes of isomerization, degradation and oxidation do not occur. Therefore, the duration of the adsorption refining process is not limited to undesirable processes of polymerization, isomerization and degradation of fatty acids.
With a subsequent decrease in temperature to 5-10 ° C and exposure to a mixture of oil with an adsorbent for 10-15 hours, crystallization of wax-like substances of oils occurs, with particles of adsorbent being the centers of crystallization.
Thus, when carrying out adsorption refining by the claimed method, along with the adsorption removal of coloring substances, phospholipids, soaps and other minor components from the oil, waxes and wax-like substances are also removed from the oils, which leads to an increase in the transparency of the oils and eliminates the stage from the process of oil production freezing. "
The inventive method is illustrated by the following examples.

Example 3. Neutralized rapeseed oil with the following quality indicators: mass fraction of phospholipids - 0.043%, mass fraction of soap - 0.010%, color 25 on the iodine scale, degree of transparency at a temperature of 5 ° C - 10 FEM was adsorbed refining by the claimed method: after mixing with rapeseed oil was exposed to F-115FF adsorbent for 5 hours at a temperature of 22 ° C, then the temperature of the mixture was reduced to 6 ° C and exposed for 14 hours. Then the adsorbent was separated from the oil by filtration.

3.Qualitative indicators of the source and refined oils are shown in table 3.
При адсорбционной рафинации заявляемым способом масла подвергаются меньшей деструкции и, вследствие этого, выгодно отличаются меньшим содержанием изомеризованных и полимеризованных соединений (характеризуется показателем "содержание диеновых в пересчете на трансизолинолевую кислоту" и "содержание триеновых в пересчете на трансизолиноленовую кислоту"), большей степенью прозрачности (абсолютно прозрачное масло - 0 ФЕМ).As can be seen from the data in tables 1-3, the adsorption refining of oils by the claimed method allows to obtain oils of higher quality, characterized by a lower mass fraction of phospholipids, mass fraction of soap, a lower color number. When adsorption refining by the claimed method, the oils undergo less degradation and, therefore, are favorably distinguished by a lower content of isomerized and polymerized compounds (characterized by the indicator "diene content in terms of transisolinoleic acid" and "triene content in terms of transisolinolenic acid"), a higher degree of transparency ( absolutely clear oil - 0 FEM).
