Ферментацию проводят в 15%-ном растворе поваренной соли в количестве 10-15% к массе сырья с ферментным препаратом коллагеназа в количестве 0,5-1,0% к массе раствора. Сырье выдерживают при температуре 5-7oC в течение 48 - 60 часов с целью ускорения процесса ферментирования и созревания для повышения усваиваемости готовых продуктов. При выдержке происходит частичный гидролиз, что способствует размягчению хитиносодержащих компонентов.
