1. Способ получения гидролизата рыбного коллагена включает подготовку и анализ сырья, в качестве которого используют шкуры промысловых рыб, ферментативное выделение гидролизата коллагена, получение кислой дисперсии гидролизата коллагена, формирование сухой формы гидролизата коллагена, при этом подготовку сырья осуществляют путем очистки рыбьих шкур, промывки их водой, замораживания, измельчения и перемешивания, анализ сырья осуществляют путем контроля содержания в сырье влаги, золы и жира, причем используют гомогенизированный продукт, содержащий не более 55% воды, не более 3% золы и менее 1% жира, ферментативное выделение гидролизата коллагена осуществляют путем промывки подготовленного гомогенизированного продукта водой, заливки 1-3% раствором протеолитического ферментного препарата при гидромодуле 1:2-1:5, выдерживание в течение 5 часов, фильтрацию продукта от примесей, получение кислой дисперсии осуществляют путем подкисления раствора раствором уксусной кислоты до 3%, формирование сухой формы осуществляют путем испарения воды из фильтрата без нагрева при температуре выше 50°С.1.
