Abstract

The present utility model relates to a process for the preparation of an extruded ready to fry frozen food product comprising sweet potatoes, rice flour and cooking oil, said process comprising the steps of: -washing unpeeled sweet potatoes; -steaming the washed sewwt potatoes until tender; -peeling the skinn off the steamed sweet potatoes; -mashing the peeled sweet potatoes to desired consistency; -mixing the mashed sweet potato with other ingredients; -cold extruding the mashed sweet potato mixture; and -blast freezing the extruded sweet potato mixture at -50oC to -35oC.
